Stir in nutmeg, cayenne, remaining 1/2 teaspoon thyme, and 1 teaspoon salt. Add milk and remaining 1 1/2 cups stock. Whisk in flour mixture. Bring to a boil, whisking frequently. Reduce to a simmer. Cook 8 minutes, whisking frequently. Add cheeses; cook, stirring, until melted. Pour over macaroni, stirring to combine.

Sprinkle with breadcrumbs and thyme sprigs. Bake until bubbling and golden brown, about 30 minutes. Serve immediately.

Tips:

  • Use whole wheat pasta for a healthier option.
  • Use low-fat or fat-free milk to reduce the fat content.
  • Use low-sodium cheese or a blend of regular and low-sodium cheese to reduce the sodium content.
  • Add vegetables to the macaroni and cheese to increase the nutritional value.
  • Use a light breadcrumb topping instead of a regular breadcrumb topping to reduce the fat and calorie content.
  • Bake the macaroni and cheese at a lower temperature for a longer period of time to prevent it from drying out.

By using healthier ingredients and making a few simple changes, you can enjoy a delicious and satisfying macaroni and cheese without all the guilt.
