LIME CHICKEN SOFT TACOS WITH SPICY YOGURT SAUCE
This is my entry for this weeks Ninja Chef's Mystery Ingredient Challenge. Ingredients were soft taco shells, garlic and yogurt. Although this wasn't much of a challenge for me, as I had already created this wonderful recipe, I could not change a good thing and wanted to share with you. This is a family favorite. I love Mexican food and this dish is so wonderful with all the fresh ingredients and the zestfulness of the lime. I hope you enjoy this as much as we do.

Steps:
- To make Spicy Yogurt Sauce, with a large knife press garlic and salt together until a smooth paste forms. Place in a small bowl with olive oil; mix well. Stir in yogurt and taco seasoning. Cover; chill 30 minutes before serving.
- Saute chicken in a medium saucepan over medium high heat for about 20 minutes. Add vinegar, lime juice, sugar, salt, pepper, green onion, garlic and cilantro. Simmer for an extra 10 minutes.
- Heat an iron skillet over medium heat. Place a tortilla in the pan, warm, and turn over to heat the other side. Repeat with remaining tortillas. An alternate way of heating the tortillas in the oven: wrap the ten tortillas in foil and place in 150 degree oven until warm, approximately 10-15 minutes.
- Serve lime chicken mixture in warm tortillas topped with tomato, lettuce, cheese and spicy yogurt sauce. We like to add the juice of one lime quarter on each of our tacos after it is put together.
Tips:
- Mise en place: Before you start cooking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and avoid any scrambling.
- Use fresh ingredients: Fresh ingredients will give your tacos the best flavor. If you can, buy organic and locally-sourced ingredients.
- Don't overcook the chicken: Chicken is a delicate meat, and it can easily become dry and tough if it's overcooked. Cook the chicken just until it's cooked through, about 5-7 minutes per side.
- Make your own tortillas: Homemade tortillas are always better than store-bought tortillas. They're softer, more flavorful, and they hold together better. If you don't have time to make your own tortillas, you can buy good-quality store-bought tortillas.
- Load up your tacos: Don't be afraid to load up your tacos with all of your favorite toppings. The more toppings, the better! Some popular toppings include shredded cabbage, diced tomatoes, sliced avocado, sour cream, and salsa.
Conclusion:
These lime chicken soft tacos with spicy yogurt sauce are a delicious and easy-to-make meal that the whole family will enjoy. They're perfect for a quick weeknight dinner or a fun weekend lunch. So next time you're looking for a tasty and satisfying meal, give these tacos a try!
