CORN MUFFINS RECIPE - (4.3/5)

Corn Muffins Recipe - (4.3/5) image

Provided by ladygourmet

Number Of Ingredients 10

5 tablespoons of butter or margarine
1 cup cornmeal
1 cup flour
2 tablespoons sugar - plus more for the tops of the corn muffins
3/4 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 eggs
1 cup sour milk - milk plus 1 tsp. white vinegar and let sit for 5 minutes
Golden Blossom Honey for drizzling

Steps:

  • Preheat Oven 350 degrees: Place all of the dry ingredients in a bowl and mix; add the butter and crumble with your fingers into bits. Gently beat the eggs with the sour milk and add to the dry ingredients while slowly stirring. Fill prepared muffin tins ¾ of the way and sprinkle the tops of the muffins with sugar. Bake for 20-25 minutes or until the toothpick test comes out clean. Let cool for a few minutes and gently remove from the tins. Serve with Golden Blossom Honey drizzled over the muffin.

Tips:

  • Use fresh corn kernels for the best flavor and texture.
  • If you don't have fresh corn kernels, you can use frozen or canned corn, but be sure to drain them well before using.
  • Use a high-quality cheddar cheese for the best results. A sharp cheddar will give the corn pudding a more pronounced flavor.
  • Be sure to whisk the eggs and milk together until they are well combined. This will help to prevent the eggs from curdling when they are added to the hot corn mixture.
  • Bake the corn pudding in a water bath. This will help to prevent the pudding from drying out and will also give it a more custard-like texture.
  • Serve the corn pudding warm with your favorite side dishes.

Conclusion:

Linda Evans' Dynasty Corn Pudding is a delicious and easy-to-make side dish that is perfect for any occasion. With its creamy texture, cheesy flavor, and sweet corn kernels, this corn pudding is sure to be a hit with everyone at your table. So next time you're looking for a delicious and versatile side dish, give Linda Evans' Dynasty Corn Pudding a try.
