When searching for a delectable and straightforward meal, a classic choice is linguine pasta adorned with pesto sauce, a Genoese condiment. Known for its vibrant green hue and aromatic flavor, pesto sauce seamlessly blends fresh basil, pine nuts, garlic, olive oil, and Parmesan cheese, resulting in a harmonious balance of flavors. With its versatility, pesto can complement a variety of pasta shapes, but its affinity for linguine is particularly noteworthy. The flat, elongated strands of linguine provide an ideal surface for the pesto to cling to, ensuring every bite is bursting with flavor.

Steps:
- When cooking the pasta, add a potato to the salted water. This trick returns to the pasta the starch it tends to lose in draining, thus preventing the linguine from clumping. Drain the pasta cubes along with the pasta, reserving a little of the cooking water. Transfer the pasta and potato to a large bowl and dress them with the pesto and butter. If the pasta looks too dry, add a little of the reserved cooking water. Serve in individual dishes, topping each with grated Parmesan cheese and pepper.
- If using a food processor, put the garlic, pine nuts, a pinch of salt, the basil, and the oil into the bowl and process it until the ingredients form a smooth paste. Add the Parmesan and the pecorino and pulse just to combine. Taste and adjust the salt.

Yield Makes 4 to 6 servings

Steps:
- Preheat oven to 350°F.
- On a baking sheet toast pecans in one layer in middle of oven until fragrant and one shade darker, about 7 minutes. Cool pecans and in a blender purée with parsley, Parmesan, lemon juice, and oil. Parsley-pecan pesto may be made 1 day ahead and chilled, covered.
- In a 6-quart kettle bring 5 quarts salted water to a boil for linguine. Cook pasta in boiling water until al dente and ladle out and reserve 1 1/2 cups pasta cooking water. Drain pasta in a colander and in kettle toss with pesto, 1 cup reserved pasta cooking water, and salt and pepper to taste, adding as much of remaining ‚ cup pasta cooking water as necessary for desired consistency.
Tips:
- Use fresh basil: Fresh basil leaves provide the best flavor for pesto sauce. If you can't find fresh basil, you can use dried basil, but the flavor will be less intense.
- Choose a good quality olive oil: The olive oil you use in your pesto sauce will make a big difference in the flavor. Use a high-quality extra virgin olive oil for the best results.
- Don't over-process the pesto: Over-processing the pesto sauce can make it bitter. Pulse the ingredients in a food processor or blender until they are combined, but don't let it run for too long.
- Season to taste: Taste the pesto sauce before serving and adjust the seasoning as needed. You may need to add more salt, pepper, or lemon juice to taste.
- Use pesto sauce as a marinade: Pesto sauce can be used as a marinade for chicken, fish, or vegetables. Simply coat the food in the pesto sauce and let it marinate for at least 30 minutes before cooking.
Conclusion:
Linguine pasta with basil pesto sauce is a delicious and easy-to-make dish that is perfect for a quick and easy weeknight meal. The pesto sauce is made with fresh basil, olive oil, Parmesan cheese, pine nuts, and garlic, and it can be used as a marinade or as a sauce for pasta, chicken, or fish.
