CREAMY PASTA WITH SMOKED SALMON, ARUGULA AND LEMON

Creamy Pasta With Smoked Salmon, Arugula and Lemon image

One selling point of smoked salmon is that you don't need to do much to it to get it on the table. Fold it on top of toast and dab it with sour cream and you have the lazy man's cocktail party. But take the salmon one or two steps further and you break out of the cliché. Salmon's buttery fat and smoke serve as useful flavoring elements. In this easy 15-minute meal, it's chopped up and used as a counterweight in pasta tossed with full-fat Greek yogurt, arugula, fresh dill, lemon zest and juice. It is, at once, lively and comforting.

SALMON AND OLIVE LINGUINE

Salmon and Olive Linguine image

Provided by Marian Burros

Categories     dinner, easy, quick, pastas, main course

Time 20m

Yield 2 servings

Number Of Ingredients 9

2 quarts water
12 ounces salmon fillet, skinned
1 large onion
1 tablespoon olive oil
1/2 teaspoon minced garlic in oil
3 tablespoons chopped, pitted Italian, French or Greek olives packed in brine
1 heaping tablespoon fresh oregano leaves or 1 1/2 teaspoons dried oregano
4 ounces fresh linguine
Freshly ground black pepper to taste

Steps:

  • Turn on broiler.
  • Bring water to boil in covered pot for linguine.
  • Cover broiler pan with aluminum foil. Broil fish two or three inches from heat, for 5 to 7 minutes, depending on thickness of fish.
  • Chop onion medium fine and saute in hot oil with garlic until onion is soft.
  • Add the olives with oregano to onion mixture; cook and stir about 2 minutes.
  • Cook fresh pasta one or two minutes. When salmon is cooked, cut into small pieces and add to onion mixture. Keep warm.
  • Drain pasta and toss with salmon-onion mixture. Spinkle with freshly ground black pepper.

Tips:

  • Choose high-quality ingredients: Use fresh salmon, arugula, and other ingredients to ensure the best flavor and texture.
  • Cook the salmon properly: Overcooked salmon will be dry and tough, so cook it until it is just opaque in the center. You can use a kitchen thermometer to check the internal temperature, which should be 145°F (63°C) for medium-rare or 165°F (74°C) for well-done.
  • Wilt the arugula: Tossing the arugula with hot pasta will help to wilt it slightly, making it more tender and flavorful.
  • Use a light hand with the dressing: Too much dressing will overwhelm the other ingredients, so use just enough to coat the pasta and vegetables.
  • Serve immediately: This dish is best served immediately, while the pasta is still hot and the arugula is still crisp.

Conclusion:

Linguine with salmon and arugula is a light and flavorful pasta dish that is perfect for a quick and easy weeknight meal. The combination of salmon, arugula, and lemon creates a bright and refreshing flavor that is sure to please everyone at the table. So next time you're looking for a new pasta recipe to try, give this one a try. You won't be disappointed!
