EASY SMOKED SALMON PASTA

Easy Smoked Salmon Pasta image

A really quick, easy sauce for 'pasta asciutta,' which means 'dry pasta.' It's not a dish over-loaded with sauce, but one that appreciates the simple smokiness of good smoked salmon. Serve sprinkled with some Parmesan or garnished with some parsley. This is not a creamy, thick sauce. Just one that really brings out the simple, yet fantastic flavors of smoked salmon. Enjoy!

LINGUINE WITH SMOKED SALMON SAUCE

Linguine with Smoked Salmon Sauce image

Categories     Sauce     Salmon     Simmer

Yield 1 person

Number Of Ingredients 10

Salt
2-3 ounces linguine
1 teaspoon butter
2 scallions, sliced fairly thin
A splash of vodka
2 or 3 slices smoked salmon
3-4 tablespoons heavy cream
Freshly ground pepper
1 teaspoon capers, rinsed
A scattering of chopped fresh parsley

Steps:

  • While the linguine is boiling (see page 181), melt the butter in a small wok or a medium skillet. Toss in the scallions, and sauté gently for 1 minute, stirring. Splash in the vodka and let it cook down a little. Tear or cut the salmon into small bite-sized pieces, and stir them into the sauce. Pour in the cream and bring to a simmer. When the linguine is done al dente, scoop it up with a spider and tongs, letting the water drain off, and mix it in with the sauce. Grind pepper generously over the pasta, and stir in the capers and parsley, then spoon it all up into a warm bowl.

Tips:

  • For the best results, use high-quality smoked salmon. Look for salmon that is firm and has a vibrant color.
  • If you don't have heavy cream, you can substitute milk or half-and-half.
  • To make the sauce extra creamy, add a tablespoon of butter.
  • If you like your sauce to have a bit of a kick, add a pinch of cayenne pepper or red pepper flakes.
  • Be careful not to overcook the salmon. It should be cooked through but still slightly pink in the center.
  • Serve the linguine with smoked salmon creamy sauce immediately.

Conclusion:

This easy-to-make linguine with smoked salmon creamy sauce is a delicious and elegant meal that is perfect for any occasion. The creamy sauce is rich and flavorful, and the smoked salmon adds a touch of luxury. This dish is sure to impress your friends and family.
