I came up with this recipe to entertain friends. Since I am a semi-vegetarian and love to BBQ, I am always inventing something new. The first time I made this, my meat-lover friends raved about this dish! I prefer mesquite coals over gas barbeques...however, either works fine.

4 large carrots, cut thin length wise
2 medium yellow squash, cut lenth wise
2 medium zucchini, cut lenght wise

6 portabella mushrooms, cut into 1/2 inch slices

  • On a preheated grill, place vegetables on grill and cook uncovered for 12-16 minuites or until tender, basting with vinegar mixture several times throughout cooking.
  • Set cooked veggies aside.

Tips:

  • Use the right bread: A sturdy bread, such as a ciabatta or sourdough, will hold up well to the grilled vegetables and cheese.
  • Grill the vegetables properly: To get the best flavor and texture, grill the vegetables over medium-high heat until they are slightly charred and tender.
  • Use a good quality cheese: A creamy cheese, such as mozzarella or cheddar, will melt well and add a delicious flavor to the sandwich.
  • Don't overcrowd the sandwich: If you pile on too many vegetables, the sandwich will be difficult to eat and the vegetables will not cook evenly.
  • Serve the sandwich immediately: The sandwich is best eaten hot off the grill, when the vegetables are still crispy and the cheese is melted.

Conclusion:

The grilled California veggie sandwich is a delicious and healthy meal that is perfect for a quick lunch or dinner. It is packed with fresh vegetables, lean protein, and healthy fats. The sandwich is also easy to make and can be customized to your liking. Whether you are a vegetarian or meat-eater, you are sure to enjoy this tasty sandwich.
