I need to lose weight and I thought that, come on girls, if we can't come up with delicious, low fat, low cal food then who can? I made this last night and my slender DH declared it my best chicken recipe ever - not sure if I'm pleased about that!!! Please try it, packed with flavour and goodness and even yummy.

2 skinless chicken breasts
2/3 cup nonfat yogurt
2 tablespoons of fresh mint, chopped
2 tablespoons fresh cilantro, chopped
1 -3 green chili, chopped
1 teaspoon creole seasoning
1/4 teaspoon ground black pepper
2 garlic cloves, crushed
salt
1/2 lime, juice of

Steps:

  • blend yoghurt with the fresh herbs and chillies, ammount depending on your taste, garlic and seasoning, not lime juice.
  • marinate for at least 2 hours.
  • place chicken and marinade into ovenproof bowl and place into oven, medium heat, for 30 mins or until chicken cooked and marinade thickened.
  • Spritz with the fresh lime juice.
  • Recommend serving over basmati and wild rice, with a side dish of roasted tomatoes.

1 tablespoon vegetable oil
1 ½ pounds skinless, boneless chicken breast halves - cubed
1 cup light mayonnaise
1 (8 ounce) can water chestnuts, drained and chopped
1 (2 ounce) jar pimento peppers, drained and chopped
½ cup sliced almonds
1 ½ teaspoons celery seed
2 tablespoons lemon juice
garlic salt to taste
1 cup shredded Cheddar cheese
1 (2.8 ounce) can French-fried onion rings

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium casserole dish.
  • Heat the oil in a skillet over medium heat. Place chicken in skillet, and cook 10 minutes, or until juices run clear. Drain, and transfer to the prepared casserole dish. Mix with mayonnaise, water chestnuts, pimentos, almonds, celery seed, and lemon juice. Season with garlic salt to taste. Layer with cheese, and top with French-fried onion rings.
  • Bake 30 minutes in the preheated oven, until cheese is melted and onion rings are lightly browned. If rings start to get too brown, put foil on casserole or lower oven rack. Watch carefully, or onion rings will burn.
