SPICY GREEN GARLIC CHICKEN SOUP

Spicy Green Garlic Chicken Soup image

This rustic soup features green garlic, a delicious seasonal specialty that comes to the market in early spring. The tender shoots are as small as scallions or tiny leeks. Left in the ground, they will grow to be full-sized heads of garlic by mid-summer, but these young specimens are wonderful, with a mild but distinct garlic flavor. If you can't find them, wild ramps make a good substitute. Otherwise, make this soup with 6 to 8 sliced cloves of regular garlic. The raw tomatillo salsa adds a welcome note of acidity and crunch. You can make it as spicy as you like by varying the amount of jalapeño.

Time 1h30m

Yield 4 servings

Number Of Ingredients 14

4 large chicken legs (thigh and drumstick), about 3 pounds
Kosher salt and black pepper
2 tablespoons olive oil
1 large yellow onion, diced, about 3 cups
4 medium carrots, peeled, cut in 2-inch chunks
1 celery stalk, diced
1 bay leaf
1 clove
2 bunches green garlic shoots, about 12 shoots (may substitute wild ramps)
1 small white onion, finely diced, soaked in cold water for 1 hour, about 1/2 cup
3 or 4 large tomatillos, husked and finely diced, about 1/2 cup
1 or 2 jalapeño peppers, seeds removed, finely chopped
3 tablespoons lime juice
Lime wedges, for serving

Steps:

  • Season chicken legs generously with salt and pepper. Pour olive oil into a Dutch oven or similar pot over medium-high heat. Add chicken legs and brown well, about 3 minutes per side. Remove and set aside. Add diced yellow onion and cook, stirring frequently, until browned and softened, about 5 minutes. Add carrots, celery, bay leaf and clove and return chicken to pot.
  • Add 10 cups water and 1 tablespoon kosher salt. Bring to a boil. Reduce heat to a simmer and cook until chicken is tender, but not falling off the bone, about 1 hour. Turn off heat and skim fat from surface of broth. (May be prepared up to this point several hours ahead, or up to a day in advance, and refrigerated.)
  • While chicken is cooking, prepare the green garlic shoots: peel tough outer layers and roots, then rinse well. Split shoots lengthwise and chop both white and tender green parts. Set aside.
  • Make the tomatillo salsa: drain diced white onion and transfer to a small bowl. Add tomatillo, jalapeño, lime juice and a little salt and stir together.
  • Just before serving, reheat soup, add chopped green garlic to pot and simmer 5 minutes. To serve, put one chicken leg in each bowl (alternatively, remove meat from bone and shred) and ladle soup over it. Pass tomatillo salsa and lime wedges at the table.

SPICY GREEN CHILE AND BOK CHOY SOUP

Spicy Green Chile and Bok Choy Soup image

Simple, fresh ingredients make this one of my family's favorite soups. You can adjust the spice from very mild to super hot, by choosing the kind of green chiles you add!

Provided by Rachel Bevilacqua

Categories     Vegetable Soup

Time 1h10m

Yield 8

Number Of Ingredients 13

2 medium heads bok choy
2 peppers serrano peppers
2 medium jalapeno peppers
2 peppers Anaheim chile peppers
2 teaspoons toasted sesame oil, or to taste
5 cloves garlic, minced
2 medium carrots, diced
1 medium onion, diced
2 stalks celery, diced
2 (32 fluid ounce) containers vegetable broth
1 medium onion, chopped
1 bunch green onions, thinly sliced
salt and ground black pepper to taste

Steps:

  • Separate the white and green parts of the bok choy. Cut the white parts into thin, bite-sized pieces. Cut the green parts into longer strips.
  • Slice serrano, jalapeno, and Anaheim chile peppers into thin rounds or bite-sized pieces, depending on size (you can do this while mirepoix is cooking).
  • Add enough sesame oil to a large soup pot to coat the bottom. Add garlic and cook over low heat until aromatic, about 1 minute. Add diced mirepoix (carrots, onion, and celery) and cook, stirring occasionally, until onion is translucent, about 10 minutes.
  • Add vegetable broth and bring to a boil. Add all chile peppers, chopped onion, and white parts of bok choy and cover. Lower heat and simmer until peppers are tender and flavors have blended, 15 to 20 minutes.
  • Reduce heat to low. Add green onions and green parts of bok choy. Cook and stir until bok choy is wilted and soft, about 5 minutes. Serve hot.

GREEN CHILE CHICKEN SOUP

Green Chile Chicken Soup image

Ridiculously easy and quick. My husband's favorite. The only way to mess this one up is to add too much milk making the soup too thin. I got this recipe from my mother, but I don't know where it originated. The amounts can vary. You really can't mess this one up.

Time 25m

Yield 1 large pot, 8 serving(s)

Number Of Ingredients 7

2 cans cream of chicken soup
1/2 can corn, drained
2 cans pre-cooked chicken or 2 pre-cooked chicken breasts, chopped
3/4 cup milk
2 cans green chili peppers (I use Hatch brand)
1/2 tablespoon pepper
tortilla

Steps:

  • Mix soups, chicken, corn and green chile in very large pot.
  • Gradually add milk to desired consistency.
  • I use about 3/4 of the empty soup can full.
  • Let boil.
  • Serve in bowls with tortillas on the side.
  • You can probably do this in a crockpot with raw chicken at the bottom, top with soup, corn, milk and chile and let cook 7 hours.

Tips:

  • Choose the right chicken. Bone-in, skin-on chicken thighs are the best choice for this soup, as they will add more flavor and moisture than boneless, skinless chicken breasts. Make sure to remove the skin before cooking, as it can make the soup greasy.
  • Use a variety of chiles. This recipe calls for a combination of poblano, serrano, and jalapeño peppers. You can adjust the heat level of the soup by using more or less of each type of pepper. If you don't have any fresh chiles on hand, you can substitute 1 tablespoon of dried chile powder.
  • Roast the chiles before adding them to the soup. Roasting the chiles will help to deepen their flavor and make them easier to digest. You can roast the chiles in a preheated oven at 400 degrees Fahrenheit for 10-15 minutes, or until they are slightly charred.
  • Use a good quality broth. The broth is the base of the soup, so it's important to use a good quality broth. You can use chicken broth, vegetable broth, or a combination of the two. If you are using a low-sodium broth, you may need to add some salt to the soup to taste.
  • Season the soup to taste. Once the soup is finished cooking, taste it and adjust the seasonings as needed. You may need to add more salt, pepper, or cumin. You can also add a squeeze of lime juice or a dollop of sour cream to brighten up the flavors.

Conclusion:

This Spicy Chicken and Green Chile Soup is a delicious and easy-to-make recipe that is perfect for a cold winter day. The combination of roasted chiles, tender chicken, and flavorful broth makes this soup a surefire hit. Serve it with a side of tortillas or bread for a complete meal.
