LLL BAKING MIX BISCUITS

LLL Baking Mix Biscuits image

This is from the La Leche League International Cookbook. When I am in a rush I just cut them into squares so I don't have to roll them out more than once. When the mood hits I will use whatever cookie cutters strike my fancy...my daughters love when I do that. I enjoy experimenting with adding different herbs, spices and spice mixes. Here's how I got my daughters to eat salmon salad sandwiches (once thought to be an impossible task!). I added Lemon Mrs. Dash and dry dill to the biscuit mix, then cut them out with an angel cookie cutter. I filled the cooked biscuits with a salmon and mayonnaise mixture and called them "Flying Pink Angel Sandwiches". They are now a favourite!

Tips and Conclusion

Making light and fluffy biscuits with a baking mix is a simple and convenient process that yields delicious results. Here are some tips for baking perfect biscuits with a baking mix:
  • Use Cold Ingredients: Keeping your butter and milk cold helps create flaky layers in the biscuits. Cold butter will not melt into the flour mixture as easily, resulting in more distinct layers.
  • Do Not Overmix: Overmixing the dough can result in tough biscuits. Gently stir the ingredients until just combined. Overmixing develops the gluten in the flour, which can lead to a dense texture.
  • Cut the Butter into Small Pieces: Cutting the butter into small pieces helps it distribute evenly throughout the flour mixture. This will ensure that each bite of your biscuit has a rich, buttery flavor.
  • Chill the Dough: Chilling the dough before baking allows the gluten to relax, resulting in more tender biscuits. You can chill the dough for at least 30 minutes, or up to overnight.
  • Bake at a High Temperature: Baking the biscuits at a high temperature helps them rise quickly, creating light and fluffy layers. A temperature of 450°F (230°C) is ideal.
In conclusion, baking biscuits with a baking mix is a quick and easy way to enjoy delicious, homemade biscuits. By following these tips, you can ensure that your biscuits turn out light, fluffy, and flavorful every time. Experiment with different baking mix flavors, add-ins, and toppings to create a variety of delicious biscuit recipes that your family and friends will love.
