LOADED OVERNIGHT BREAKFAST CASSEROLE

Loaded Overnight Breakfast Casserole image

A versatile loaded overnight breakfast casserole dish that can be easy to prep, (pre-cooked meats, pre-shredded cheese) and be made more wholesome (fat-free dairy, turkey breakfast meats). Personally, I saute my ham and sausage in bacon grease!

Time 10h

Yield 8

Number Of Ingredients 12

½ pound bulk pork sausage
2 (12 ounce) packages frozen pre-cooked hash brown patties, thawed
½ pound diced fully cooked ham
2 cups shredded Monterey Jack cheese
2 teaspoons dry mustard
1 ½ teaspoons onion powder
12 large eggs
1 ½ cups evaporated milk
½ cup half-and-half
½ teaspoon kosher salt
½ teaspoon ground black pepper
½ cup shredded sharp Cheddar cheese, or more to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Remove from heat and let cool slightly, about 5 minutes. Transfer to a large bowl.
  • Add hash browns, ham, Monterey Jack cheese, dry mustard, and onion powder to sausage; mix to combine. Pour loosely into a greased 9x13-inch baking pan. Whisk eggs, evaporated milk, half-and-half, salt, and pepper together in a large bowl. Pour evenly over the hash brown mixture, cover with aluminum foil, and refrigerate, 8 hours to overnight.
  • Pull from the refrigerator 30 minutes prior to cooking. Add Cheddar cheese and recover.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Cook in the preheated oven for 45 minutes. Remove foil and continue to cook, uncovered, until cheese is bubbly, 15 to 20 minutes more. Let stand for 10 minutes to firm up before serving.

CRASH HOT POTATOES

Crash Hot Potatoes image

Courtesy of Pioneer Woman, who got the recipe courtesy of Trish! I have made these several times now and the most important thing is to be sure to boil your potatoes all the way so they smash easily. I recently tried them using Golden Baby Dutch potatoes and they were absolutely delicious. Baby Dutch potatoes are super super creamy, so if you don't like that texture, I wouldn't recommend them. They are yummy using red potatoes too. You can't go wrong with this one! I also use olive oil spray on the tops rather than drizzling, just to cut down the fat content.

Time 45m

Yield 8 potatoes, 4 serving(s)

Number Of Ingredients 5

8 new potatoes (or any small potatoes)
olive oil, for drizzling
kosher salt, to taste
black pepper, to taste
rosemary (or any desired herb)

Steps:

  • Boil potatoes in salted water until fork tender. (This is very important! They must be very tender.).
  • Drizzle sheet pan generously with olive oil.
  • Place tender potatoes on sheet pan, leaving plenty of room between each potato.
  • With a potato masher, gently press down each potato until it slightly mashes, rotate the masher 90 degrees and mash again. (One reviewer suggested using the bottom of a glass for this step. I tried it, and it works MUCH better than the masher.).
  • Brush tops of mashed potatoes with olive oil.
  • Sprinkle with salt, pepper and herbs.
  • Bake in 450 degree oven for 20-25 minutes or until golden brown.

Number Of Ingredients 7

Baby Red Potatoes
Olive Oil
Salt
Pepper
Fresh Herbs
Garlic
Parmesan Cheese

Steps:

  • These were the most delicious potatoes I've ever had, I swear! In Australia their called Crash Hot Potatoes, I don't know why (any Australians have some insight?), whatever the name, they were SO awesome! And super simple, just boil some baby potatoes (I used red) until fork tender. Preheat oven to 450 degrees. Drizzle olive oil on a baking sheet, set potatoes on sheet and using a potato masher, gently smash each potato down, rotating masher both ways (so it looks like a thick cookie). Drizzle with olive oil, season with salt/pepper and sprinkle cut fresh herbs and garlic over each. THEN top with some lovely grated Parmesan cheese. Bake for 20 minutes. OMG...crispy on the outside, soft in the middle, salty, garlicky, herby and cheesy goodness.

Tips

  • When choosing potatoes for your crash hots, look for ones that are firm and have a thin skin. This will help them to cook evenly and prevent them from becoming mushy.
  • To make sure your crash hots are cooked through, insert a toothpick or skewer into the center. If it comes out clean, they are done.
  • If you are using a cast iron skillet to cook your crash hots, be sure to preheat it over medium-high heat before adding the potatoes. This will help to create a crispy exterior.
  • Don't overcrowd the pan when cooking your crash hots. This will prevent them from cooking evenly and becoming soggy.
  • Feel free to get creative with your toppings! Some popular options include cheese, bacon, chili, and sour cream.

Conclusion

Crash hots are a delicious and easy-to-make meal that can be enjoyed for breakfast, lunch, or dinner. They are a great way to use up leftover potatoes, and they can be customized to your liking. So next time you are looking for a quick and satisfying meal, give crash hots a try!
