4 cups chicken broth or 4 cups vegetable broth
1 1/4 cups milk (2% or whole works best)
1 (10 3/4 ounce) can condensed cream of celery soup (cream of chicken also works nicely)
2 tablespoons cornstarch
1/4 cup cold water
8 ounces cheddar cheese, shredded
1 carrot, shredded (optional)

Steps:

1 onion, chopped

4 (14.5 ounce) cans chicken broth
1 (1 pound) loaf processed cheese food, cubed

1/2 cup chopped celery
2 tablespoons butter
4 tablespoons flour

1/2 cup sharp cheddar cheese, grated

Steps:

  • In a medium saucepan, bring broth, broccoli (about 1 med. head will yield 3 cups chopped broccoli) and celery to a boil over high heat.
  • Reduce heat to medium and simmer until broccoli is tender, about 10 minutes.
  • Stir occasionally.
  • Meanwhile, melt butter in a large saucepan over medium heat and stir in flour, salt and pepper; cook for 1 minute.

1 head broccoli, chopped
1 head broccoli, finely chopped
½ cup shredded carrots
6 tablespoons salted butter, cubed
1 medium onion, thinly sliced
6 tablespoons all-purpose flour, or as needed
2 cups milk
½ (8 ounce) package processed cheese food (such as Velveeta®), cubed

Steps:

  • Bring chicken broth to a simmer in a large pot. Add both heads of broccoli and carrots to the simmering stock; simmer for 5 minutes.
