1 medium green pepper, sliced
2 beef top round steaks (3/4 inch thick and 1 pound each)
1 teaspoon salt, divided
2 tablespoons olive oil
1 garlic clove, minced
3 tablespoons all-purpose flour
1 can (28 ounces) diced tomatoes, undrained
1/2 cup beef broth
1 teaspoon sugar
1/2 teaspoon dried thyme
1/2 teaspoon pepper
1/4 teaspoon hot pepper sauce

Steps:

  • Place the sweet potatoes, onion and green pepper in a 6-qt. slow cooker. Cut each steak into three serving-size pieces; sprinkle with 1/2 teaspoon salt. In a large skillet over medium heat, brown steaks in oil in batches on both sides. Place steaks over vegetables, reserving drippings in pan., Add garlic to drippings; cook and stir for 1 minute. 4 medium sweet potatoes, peeled and cut 3/4 inch thick
1 large onion, sliced
1 medium green pepper, cut in wedges
1 1/2 lbs beef round steak, cut about 3/4 inch thick
salt
2 tablespoons cooking oil
1 clove garlic, minced
3 tablespoons flour
1 (16 ounce) can tomatoes, cut up
1/2 cup beef broth
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/8 teaspoon pepper
3 dashes hot sauce

Steps:

  • Layer sweet potato slices, onion slices, and green pepper wedges in a 2 quart casserole.
  • Cut meat in a 6 serving size pieces; pound to about half the original thickness.
  • Sprinkle with a little salt.
  • In a skillet quickly brown meat in hot oil.
  • Transfer meat to casserole atop sweet potato mixture; reserve drippings in skillet.

1 1/2 lb round steak, cut 1 inch thickness
3-4 sweet potatoes, peeled, sliced
1 medium onion, sliced
1 medium green pepper, seeded, sliced into rings
1 16 oz can(s) whole tomatoes
1 c beef broth
3 Tbsp oil
2 Tbsp flour
1 clove garlic, minced
1 tsp sugar
1/2 tsp salt
1/2 tsp thyme
1/2 tsp pepper
3-5 dash(es) frank's, or favorite hot sauce

Steps:

  • 1. Cut round steak into 1-1 1/2 inch slices. Pound steak almost to half thickness. Add oil to dutch oven, heat on med. high. Brown steaks on each side. Remove steaks, set aside to rest.
  • 2. Turn heat down to med. low add flour to oil and whisk/stir to blend, scrapping up the brown bits. Cook a minute or two, add garlic and stir. Add chopped tomatoes with juice, beef broth, salt, pepper, thyme and hot sauce. Stir till combined.
  • 3. Turn heat down to med. low, add sweet potatoes, onions and green pepper rings. Stir to combine. Cook for about 5 minutes, making sure all is blended.
  • 4. Turn heat to low, place steak into the mix, slightly submerging and add any juices from resting steak. Cover and cook for 1-1 1/2 hours, until desired tenderness. Remove from heat, serve and Enjoy~
