This is a very old WW recipe that I have tweaked a bit. When you have a craving for French toast and want to keep the calories down, this is a good option.

1 slice bread (any day-old)
1 egg, well beaten
cinnamon
artificial sweetener
Pam cooking spray

Steps:

  • Cut a piece of tin foil large enough to accommodate the bread and spray with Pam.
  • In a bowl, soak bread in the well beaten egg, turning the bread at least once.
  • Place bread on tin foil and broil.
  • You can flip it over, careful not to burn yourself, but it is not necessary. Watch closely, so it doesn't burn. It is done when it is moderately browned, 2-4 minutes.
  • Sprinkle top with cinnamon and/or mixture of cinnamon and artificial sweetener (one envelope is more than enough).
  • Suggestion: You can place multiple slices on a larger piece of foil that you have placed on a cookie sheet or broiler pan, for ease of removing. But each slice is one serving.

1/2 c fat-free cream cheese
2 Tbsp strawberry preserves
8 1"-slices french bread
2 egg whites
1 egg, beaten
3/4 c gat-free milk
1/2 tsp vanilla
1/8 tsp cinnamon
1/4 tsp nutmeg
1/2 c low-sugar strawberry preserves

Steps:

  • 1. In bowl, mix together cream cheese and 2 tbsp preserves. Using a knife, make a pocket in each bread slice, but don't cut all the way through.
  • 2. Fill each pocket w/ 1 tbsp cream cheese mix. In another bowl, combine egg whites, egg, milk, vanilla, cinnamon and nutmeg.
  • 3. Spray a lg skillet w/ cooking spray. Place over medium heat. Dip bread slices into egg mix, coating both sides. Place bread in skillet. Cook about 3-4 min, turning once until golden brown. In microwaveable bowl, microwave 1/2 cup preserves until melted. Spoon preserves over french toast.
