NOT YOUR MAMA'S MEATLOAF - LOW CARB & BEEFED UP

Not Your Mama's Meatloaf - Low Carb & Beefed Up image

I saw this made on Foodtv. I'm not big on meatloaf but DH is so I thought I'd give it a try. It is quite tasty and DH really enjoyed it. I think this could be easily altered for different flavors or cuisines. It is supposed to be a healthier version of the one your mother made. I made this without the prosciutto.

1/4 cup roasted red pepper, diced
8 ounces thawed chopped spinach
2 tablespoons chopped fresh parsley leaves
2 garlic cloves, minced

Tips:

  • Use a variety of ground meats: Combining different types of ground meat, such as beef, pork, and lamb, can add flavor and texture to your meatloaf.
  • Don't overmix the meatloaf mixture: Overmixing can make the meatloaf tough. Mix the ingredients just until combined.
  • Add moisture to the meatloaf mixture: This can be done by adding eggs, bread crumbs, or vegetables. Moisture will help to keep the meatloaf moist and juicy.
  • Season the meatloaf mixture well: Use a variety of herbs and spices to flavor the meatloaf. Common seasonings include garlic, onion, salt, and pepper.
  • Bake the meatloaf at a high temperature: This will help to create a crispy crust on the outside of the meatloaf. Reduce the temperature after 15 minutes to finish cooking the meatloaf through.
  • Let the meatloaf rest before slicing: This will help the meatloaf to hold together better when sliced.

Conclusion:

Low-carb beefed-up meatloaf is a delicious and satisfying dish that is perfect for a family meal. With its combination of ground beef, pork, and lamb, this meatloaf is packed with flavor. The addition of vegetables and cheese makes it a complete meal in one. Serve this meatloaf with your favorite sides, such as mashed potatoes, green beans, or a salad.
