1 cup cubed ham
1/2 cup finely diced celery
2 cups water
2 (10 ounce) cans low sodium chicken broth
1 (19 ounce) can black beans, washed
1/2 cup tiny diced carrot
1 minced onion
1/2 teaspoon minced garlic
1/2 teaspoon cayenne pepper
1/2 teaspoon cumin
1/2 teaspoon salt

Steps:

  • In a large pot combine all ingredients. Bring to a boil - reduce heat and allow soup to gently simmer for approximately 2 hours stirring occasionally. The closer to 2 hours this soup cooks the better it tastes.

250 g ham
1 3/4 liters vegetable stock, plus
1 tablespoon vegetable stock
1 red onion
2 -3 garlic cloves
2 spring onions
3 carrots
2 (400 g) cans butter beans
1/4 cup basil
3 tablespoons lemon juice

Steps:

  • Heat 1 tbsp stock in large pot and saute finely diced red onion, finely sliced ham (I used deli leg off the bone) and garlic for about 5 minutes.
  • Add rough cut carrots, butter beans (can use chickpeas), spring onions, 1 3/4 litres of vegetable (or chicken) stock and bring to a boil.
  • NOTE: Adjust garlic to your taste.
  • SIMMER uncovered for twenty minutes and let sit for 5 minutes.
  • MASH; reheat if necessary and add chopped basil and lemon juice.

1 ham bone with some meat
1 drizzle olive oil
3 stalks celery with leaves, chopped, or more to taste
½ onion, chopped
4 cloves garlic, crushed
½ (12 ounce) package baby carrots
1 cup fingerling potatoes, or to taste
1 small red bell pepper, seeded and chopped
4 cups water
1 (19 ounce) can black beans, drained and rinsed
1 (12 fluid ounce) can vegetable juice (such as V8®)
1 (11 ounce) can canned corn (such as Green Giant Niblets®), drained
2 tomatoes, chopped
2 tablespoons chopped green chilies
2 teaspoons ground cumin
salt and ground black pepper to taste

Steps:

  • Place ham bone in a large slow cooker.
  • Heat olive oil in a large saucepan over medium-high heat. Saute celery, onion, and garlic until onion is translucent, about 5 minutes. Pour mixture over the ham bone in the slow cooker.
  • Saute carrots, potatoes, and red bell pepper in the same saucepan until coated in oil, about 1 minute. Transfer vegetables to the slow cooker; add water, black beans, vegetable juice, corn, tomatoes, green chiles, cumin, salt, and black pepper.
