Low Carb Macaphony and Cheese image

Spread it thin and cook it longer for better texture! This recipe is from my low carb days. I made it often. It is all natural and rich and a very good fix for a pasta craving. Cooking time includes 30 minutes for drain time.

12 ounces firm tofu
8 ounces sharp cheddar cheese, grated
2 eggs, beaten
1/4 cup cream
1/4 teaspoon onion powder
1 dash cayenne
1/4 teaspoon garlic powder
1/4 teaspoon dry mustard
paprika
parmesan cheese

Steps:

  • Drain tofu well (I let mine sit in the colander for awhile and then I squish out even more liquid with my hands).
  • Mix all ingredients together mashing the tofu well (but leaving a few chunky pieces),.
  • Place in a buttered casserole dish.
  • Sprinkle with Parmesan and a little paprika.
  • Bake at 350°F for 45 minutes.
  • The top should be golden brown (its the crispy brown parts that really give it the flavor).

Great for fulfilling a mac and cheese craving, modified version of what I found on the back of the Dreamfields box. We loved this! Digestible carbs per serving is 12.

8 ounces dreamfields elbow macaroni
1 tablespoon olive oil
1/4 cup chopped white onion
1 minced garlic clove
1/2 cup fat-free half-and-half
1/2 cup 1% low-fat milk
2 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon nutmeg
1/2 teaspoon dry mustard
nonstick cooking spray
2 pieces Laughing Cow cheese, wedges swiss (optional)
1 cup low-fat sharp cheddar cheese
2 tablespoons parmesan cheese
4 -6 mushrooms (optional)
low-fat hot dog, sliced (optional)

Steps:

  • Heat oil in 12-inch skillet over medium heat; sauté onion, garlic and mushrooms for 3 to 5 minutes, stirring occasionally. Add half & half and milk, season with salt, pepper and nutmeg. Cook for 10 minutes, stirring occasionally.
  • Meanwhile, cook pasta according to package directions. Pre-heat oven to 425 degrees F. Spray a 9x9 baking dish with nonstick cooking spray.
  • Toss pasta and sauce together. Add cheeses and optional hot dog slices; stir until well blended and pour into casserole dish. Top with Parmesan.
  • Bake uncovered for 20 minutes or until golden brown. Let cool for 5 minutes before serving.

I adapted this recipe from my mac and cheese dish when my husband went on a low-carb diet.

1 head cauliflower
1 sweet onion (such as Vidalia®), thinly sliced
1 cup grated mozzarella cheese
1 cup grated Monterey Jack cheese
¾ cup grated Gouda cheese
¼ teaspoon cayenne pepper
salt and ground black pepper to taste
1 cup milk
½ cup bread crumbs, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a Dutch oven or baking dish.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until slightly tender, 5 to 6 minutes. Remove cauliflower and cool until easily handled. Break cauliflower into bite-size pieces.
  • Layer cauliflower, onion, mozzarella cheese, Monterey Jack cheese, and Gouda cheese in the Dutch oven; season with cayenne pepper, salt, and black pepper. Pour milk over cheese layer. Cover Dutch oven.
  • Bake in the preheated oven for 45 minutes. Remove cover and stir mixture. Sprinkle bread crumbs over the top. Continue baking until top is browned, 20 to 30 minutes more. Cool for 5 minutes before serving.

1-1/4 cups shredded reduced-fat cheddar cheese
2/3 cup fat-free cottage cheese
3 tablespoons all-purpose flour

2-1/2 cups cooked elbow macaroni
1 tablespoon grated onion
Paprika

Steps:

  • In a blender or food processor, combine the milk, cheeses, flour and pepper. Cover and process until creamy. Pour into a bowl; stir in macaroni and onion.
