This recipe is for using leftover sausages, and I have the quantities for one person. This can be easily scaled up to feed more.

Steps:

  • Slice the sausages into bitesize chunks, and put them in a medium saucepan over a low heat (no need to add excess oil, unless they are very lean)
  • Slice the onions, carrots and garlic and add them to the pan. Then add the herbs.
  • Whilst this slowly browns, chop up the cabbage finely.
  • Add the stock, wine, mustard, tomato pureé. Give it a stir and add the cabbage.
  • Let this cook for around 20 minutes until everything is nice and soft. Take a tbsp of the stock mixture and mix it into the flour in a little bowl. Add this flour/stock paste into the pan and stir quickly in order to thicken slightly.
  • Season with black pepper and serve. This dish could be adapted to use leftover roast potatoes, or add some grain like pearl barley. Could also be served with crusty bread.

Tips:

  • Choose low-carb sausage: Opt for sausage that is labeled "low-carb" or "keto-friendly" to keep the dish as low-carb as possible.
  • Use low-carb vegetables: Stick to low-carb vegetables like mushrooms, bell peppers, and zucchini to minimize the overall carb count.
  • Use a creamy sauce: A creamy sauce made with heavy cream or cream cheese adds richness and flavor to the casserole without significantly increasing the carb content.
  • Don't overcook the chicken: To ensure tender and juicy chicken, cook it until it reaches an internal temperature of 165°F (74°C).
  • Serve with a side of cauliflower rice or low-carb bread: To make a complete meal, serve the sausage, mushroom, and chicken casserole with a side of cauliflower rice or low-carb bread.

Conclusion:

This low-carb sausage, mushroom, and chicken casserole is a delicious and satisfying dish that is perfect for those following a low-carb or keto diet. With its combination of flavorful sausage, tender chicken, and a creamy sauce, this casserole is a surefire hit. It's easy to make, packed with protein, and low in carbohydrates, making it a great option for busy weeknight dinners or meal prep.
