LOW CARB TROPICAL MIMOSA
A low-carbing friend invented this ..... it's so yummy but I only crave it in summer. Of course, don't use good champagne as a mixer - I buy Andre Extra Dry, I've gotten that as low as $3.69 a bottle! I like a 50/50 mix but you can adjust to suit your tastes.

Steps:
- Combine the granulated sugar, 1/2 cup water and chopped dragon fruit in a small saucepan over medium-high heat. Bring to a simmer and cook until the sugar dissolves, about 2 minutes. Mash the dragon fruit with a fork or potato masher. Set aside to cool completely. (The dragon fruit will tint the simple syrup pink while it cools.) Once cooled, strain the dragon fruit pieces and discard. (See Cook's Note.)
- To serve, fill 6 champagne flutes with sparkling wine. Pour about 1 tablespoon of the dragon fruit simple syrup into the bottom of each of the champagne flutes. Top each with 1/4 cup of passion fruit juice. Garnish with the dragon fruit slices.

Tips:
- Choose the right fruits: Use fresh, ripe tropical fruits for the best flavor. Some popular choices include pineapple, mango, papaya, and guava.
- Make your own simple syrup: This is a great way to control the sweetness of your mimosa. To make simple syrup, combine equal parts of water and sugar in a saucepan and bring to a simmer over medium heat. Stir until the sugar has dissolved completely, then let cool before using.
- Chill your ingredients: This will help to create a refreshing mimosa. Chill your sparkling water, fruit juice, and simple syrup before assembling the drinks.
- Garnish your mimosas: Add a festive touch by garnishing your mimosas with tropical fruit slices, mint leaves, or edible flowers.
Conclusion:
These tropical mimosas are a delicious and refreshing way to enjoy a summer brunch or party. With just a few simple ingredients, you can create a cocktail that is both beautiful and delicious. So next time you're looking for a fun and festive drink, give these tropical mimosas a try.
