6 eggs
1/4 cup mayonnaise or salad dressing
1/4 cup garlic-and-herb spreadable cheese
4 oz sliced salmon lox

Steps:

  • In 2-quart saucepan, place eggs in single layer. Cover with cold water at least 1 inch above eggs. Cover and heat to boiling; remove from heat. Cover and let stand 20 minutes; drain. Immediately run cold water over eggs or place them in ice water until completely cooled.
  • Peel eggs; cut in half lengthwise. Slip out yolks and place in small bowl. Mash yolks with fork. Stir in mayonnaise and cheese.
  • Reserve 2 slices of salmon for garnish. Coarsely chop remaining salmon; fold into yolk mixture. Fill egg whites with yolk mixture, heaping it lightly. Arrange on serving dish.
  • Cut reserved salmon crosswise into 1/2-inch-wide strips, trimming to about 1 inch long. Loosely roll up pieces of salmon into rosebud shape. Place 1 rosebud on each egg.

6 hard-boiled eggs, peeled, cut in half, yolks removed
2 tablespoons low-fat cream cheese
1/4 cup nonfat sour cream or 1/4 cup low fat cottage cheese, pureed
1 ounce lox
1 teaspoon lemon juice
1 tablespoon fresh dill (for garnish)
1 teaspoon capers, drained

Steps:

  • Take 2 egg yolks and place in food processor, using steel blade (Use remaining 4 yolks for some other purpose).
  • Add cream cheese, sour cream (cottage cheese), salmon & lemon juice.
  • Pulse until you have a well blended mixture (If you over pulse the mixture will become runny).
  • Fill the eggs and garnish with a sprig of dill and 3 capers.

12 eggs, hard boiled
1 (6 ounce) can shrimp, drained
1/3 cup mayonnaise (to taste)
1 tablespoon prepared mustard
1 teaspoon onion powder
1 teaspoon lemon juice

Steps:

  • Place eggs in salted water, and bring to a boil. When water starts to boil hard, take off burner, put on cover, and let sit for 15 minutes.
  • Take eggs out, and crack each one as you run under cold water, to peel off the shell.
  • Cut each egg in half, and put the yolks in a bowl. Put egg whites and egg yolks aside for now.
  • In a bowl mix mayonnaise, mustard, onion powder, and lemon.
  • Open can of shrimp, and drain well. Using your hands mince shrimp between your fingers until they are mixed up well (so they are shredded and not in pieces).
  • Repeat this step with the egg yolks too. (I hate big chunks of egg).
  • Add shrimp and eggs to the mayonnaise/mustard mixture in the bowl,and mix together well.
  • Stuff egg whites with mixture.
  • Put on a serving plate, and sprinkle with paprika to decorate.
  • Cover with Saran Wrap, and chill until ready to serve.
