2 cups cut-up cooked chicken
1/4 cup dry-roasted peanuts, if desired
4 medium green onions, sliced (1/4 cup)
1 bag (16 oz) coleslaw mix (shredded cabbage and carrots)
1 can (11 oz) mandarin orange segments, drained

Steps:

  • In 10-inch skillet, melt butter over medium heat. Stir in seasoning packet from soup mix. Break block of noodles into bite-size pieces over skillet; stir into butter mixture.

3 tablespoons thinly sliced green onions
DRESSING:
2 tablespoons white vinegar
2 tablespoons olive oil
1 tablespoon reduced-sodium soy sauce

1/2 teaspoon ground ginger
1/4 teaspoon salt

12 cups romaine lettuce, torn into pieces and loosely packed
1 (10 ounce) bag shredded carrots
2 tablespoons sesame seeds, toasted and salted
1 1/2 cups canned mandarin oranges, packed in juice and drained
1 cup red cabbage, shredded
1 cup crisp chow mein noodles
1/4 light mayonnaise
2 1/2 tablespoons rice vinegar
1 tablespoon Splenda sugar substitute
2 1/2 teaspoons sesame oil
