1/2 cup panko (Japanese-style bread crumbs)
2 tablespoons all-purpose flour
1/4 cup butter, melted
Vegetable oil, for brushing foil
4 (6 to 8-ounce) mahi mahi fillets
Kosher salt and pepper
2 tablespoons coconut milk

Steps:

  • Preheat oven to 425 degrees F. In a medium bowl, stir together the nuts, panko, flour, and butter. Set aside.
  • Place a piece of aluminum foil on a baking sheet and brush it liberally with vegetable oil. Place the mahi mahi on the foil and sprinkle each fillet with salt and pepper on both sides. 1 generous cup/150 grams blanched almonds
1/2 cup/50 grams macadamia nuts
1/3 cup/40 grams pitted dates
1 liter filtered water

Steps:

  • Combine almonds, macadamia nuts and dates in a large lidded plastic container. Add filtered water, cover, and let soak overnight at room temperature, at least 12 hours.
  • Using a blender set to the highest speed, process mixture for 3 to 4 minutes or until finely puréed. 1 1/2 teaspoons salt
3 egg yolks
1 cup milk
