1 cup (2 sticks) unsalted butter, softened
8 cups confectioners' sugar
1/2 cup milk
2 teaspoons vanilla extract
Food coloring (optional)

Steps:

Cupcakes:
1 1/2 cups self-rising flour
1 1/4 cups all-purpose flour
1 cup (2 sticks) unsalted butter, softened
2 cups sugar
4 large eggs, at room temperature
1 cup milk
1 teaspoon vanilla extract
Vanilla Buttercream Icing:
1 cup (2 sticks) unsalted butter at room temperature
1 teaspoon vanilla extract
4 cups sifted confectioners' sugar (approximately 1 pound)
2 to 3 tablespoons milk

Steps:

  • Cupcakes: Preheat oven to 350 degrees. Line two 12-cup muffin tins with cupcake papers. In a small bowl, combine the flours. Set aside.
