Steps:
- Preheat the broiler. Spread the almonds on a rimmed baking sheet and broil, stirring frequently, until golden, 2 to 3 minutes. Combine the toasted almonds, 2 tablespoons olive oil, the lemon juice, honey, mustard, 1/4 cup water, 1/4 teaspoon salt, and pepper to taste in a blender and blend until smooth. Transfer to a bowl and stir in the parsley.
- Toss the asparagus with the remaining 1 tablespoon olive oil, 1 tablespoon water, the lemon zest, and salt and pepper to taste on the same baking sheet. Spread in a single layer and broil until the asparagus is bright green and crisp-tender, about 4 minutes. Transfer to a plate and keep warm.
- Sprinkle the fish with 1/4 teaspoon each salt and pepper and arrange on the same baking sheet, rounded side down; broil until opaque, about 3 minutes. Turn the fillets, brush with some of the almond sauce and continue broiling until just firm and cooked through, 3 to 5 more minutes. Divide the fish and asparagus among plates and top with the remaining almond sauce.

Steps:
- Heat oil in heavy large skillet over medium-high heat. Add onion; sauté until translucent and beginning to brown, about 4 minutes. Add wine and anchovy paste. Boil until reduced to 3/4 cup, about 3 minutes. Add tomatoes with juice; bring to boil.
- Sprinkle fish with salt and pepper. Add fish to skillet atop tomato mixture. Reduce heat to low, cover, and simmer until fish is cooked through, about 9 minutes. Using slotted metal spatula, transfer fish to plate and tent with foil to keep warm. Mix olives, 2 teaspoons oregano, and orange peel into sauce in skillet. Increase heat to high and boil until sauce is reduced and thickened, about 6 minutes. Season to taste with salt and pepper. Place 1 fish fillet on each of 4 plates. Pour sauce over and around fish, sprinkle with remaining 1 teaspoon oregano, and serve with warm toasted bread.
Tips:
- Choose a fresh Mahi-mahi fillet. The fresher the fish, the better the dish will taste. Look for a fillet that is firm and has a slight sheen to it.
- Use a variety of fresh herbs. Oregano, thyme, and basil are all good choices. You can also use a store-bought Italian seasoning blend.
- Don't overcook the fish. Mahi-mahi is a delicate fish that can easily be overcooked. Cook it for just a few minutes per side, or until it is opaque and flakes easily with a fork.
- Serve the fish immediately. Mahi-mahi is best served hot, right out of the pan. You can garnish it with fresh herbs or lemon slices.
Conclusion:
Mahi-mahi in Fresh Oregano Sauce is a simple yet delicious dish that is perfect for a weeknight meal. The fish is cooked in a flavorful sauce made with fresh herbs, tomatoes, and white wine. Serve it over rice or pasta for a complete meal.
