Two 2 1/2-pound fryer chickens, cut into 8 pieces
2 cups all-purpose flour
Coarse salt and freshly ground pepper
Vegetable oil, for frying

MAHOGANY CHICKEN

Quick and easy chicken with Asian flavors. My husband saw it in Cook's Country and asked me to try it--we all loved it! To use as a make-ahead meal, portion out the chicken and place in a zip-loc bag. Measure sauce ingredients in a second bag.

Time 45m

Yield 6 serving(s)

Number Of Ingredients 10

1 1/2 lbs chicken breasts (original recipe called for bone-in thighs with skin)
pepper
2 teaspoons vegetable oil
1/2 cup soy sauce
1/4 cup sugar
2 tablespoons sweet sherry or 2 tablespoons white wine
2 teaspoons grated fresh ginger
1 medium garlic clove, minced
1/2 teaspoon cornstarch
2 scallions, sliced thin on diagonal

Steps:

  • Dry chicken thoroughly with paper towels and season with pepper. Heat oil in large nontstick skillet over medium-high heat until shimmering. Cook chicken, skin side down (thighs will fit into pan snugly), until skin is deep brown and crisp, (15 to 20 minutes). Chicken should be moderately brown after 10 minutes. If too browned, reduce heat; if pale, increse heat. Turn chicken over, reduce heat to medium, and cook until second side is brown and meat is thoroughly cooked, about 10 minutes.
  • Meanwhile, whisk soy sauce, sugar, mirin, ginger, garlic, and cornstarch together in small bow.
  • Transfer chicken to plate and pour off fat. Add soy mixture to skillet and return to medium heat. Return chicken to skillet, turn to coat with sauce, and simmer, skin side up, until sauce is thick and glossy, about 2 minutes.
  • Transfer chicken to serving platter and sprinkle with scallions. Pour remaining sauce into small bowl and pass separately.

1 cup chopped cilantro leaves
6 tablespoons extra-virgin olive oil
3 large cloves garlic, minced
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
5 tablespoons dark brown sugar
3 tablespoons Dijon mustard
2 tablespoons bottled hoisin sauce
2 teaspoons balsamic vinegar
1/2 cup plus 1 1/2 teaspoons lime juice, divided
1 1/2 pounds boneless skinless chicken breast halves, cut in 1-inch cubes
2 large sweet potatoes, peeled and cut in 1/2-inch pieces
2 tablespoons unsalted butter
1 teaspoon chopped canned chipotle pepper
1 teaspoon adobo sauce (from canned chipotle)
3/4 teaspoon ground cumin
1/2 teaspoon lime zest
Cilantro sprigs, for garnish

Steps:

  • In a small bowl, mix together chopped cilantro, olive oil, minced garlic, 1/4 teaspoon of the salt and 1/8 teaspoon of the pepper; set aside.
  • In medium bowl, mix together brown sugar, mustard, hoisin sauce and vinegar. Reserve 2/3 of this mixture. To remainder, add 1/2 cup lime juice and stir in chicken; cover and refrigerate.

To serve, divide potatoes among 4 plates; top each with 2 skewers of chicken and drizzle with cilantro chimichurri sauce. Garnish with cilantro sprigs.

MARYLAND FRIED CHICKEN WITH CREAM GRAVY

Maryland Fried Chicken With Cream Gravy image

A wonderful and easy recipe based on one from the February/March 2007 issue of Cook's Country magazine. The contributor, Jeremy Sauer, says in its intro, "While other regions of the country rely on a thick buttermilk batter and a deep-fat fryer to deliver a crusty crunch, in Maryland the chicken parts are simply seasoned, floured, and shallow-fried. This old-fashioned cooking method results in crisp, mahogany chicken that, with a gentle tug, sheets off the bone with its deliciously brittle skin still intact. But what really sets Maryland fried chicken apart is the creamy, black pepper-spiked pan gravy that's equally fit for drumstick dunking or mopping up with a biscuit." Cook time doesn't include the 30 minutes (up to 2 hours) refrigerator time. NOTE: To ensure even-cooking, breasts should be halved crosswise and leg quarters separated into thighs and drumsticks.

1 tablespoon ground cumin
6 chicken drumsticks
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
4 cups vegetable oil

Steps:

  • In a large sealable plastic bag combine buttermilk and 1/2 tablespoon cumin. Add drumsticks and seal bag, pressing out excess air. Marinate drumsticks at room temperature 15 minutes. MAHOGANY PORK CHOPS

Mahogany Pork Chops image

These are the best pork chops. My family just loves them. The best part is, the marinade only has 2 ingredients. They are great from the skillet, oven, or off the grill. I like to make these with extra-virgin olive oil, but not needed.

4 teaspoons teriyaki sauce or marinade
2 teaspoons molasses

  • Spray a skillet with cooking spray and place over medium heat. Cook the pork chops until the juices run clear and the chops are browned and no longer pink inside, about 10 minutes per side. Tips:

  • Use a flavorful marinade. The marinade will help to infuse the chicken with flavor and keep it moist during frying. Consider using a marinade that includes herbs, spices, and citrus fruits.
  • Use a well-seasoned cast-iron skillet. A cast-iron skillet will help to evenly distribute the heat and create a crispy crust on the chicken.
  • Fry the chicken in small batches. This will help to prevent overcrowding the skillet and ensure that the chicken cooks evenly.
  • Use a meat thermometer to ensure that the chicken is cooked through. The internal temperature of the chicken should reach 165 degrees Fahrenheit before it is safe to eat.
  • Let the chicken rest before serving. This will help to redistribute the juices and make the chicken more tender.

Conclusion:

Mahogany fried chicken is a delicious and versatile dish that can be enjoyed for any occasion. With its crispy crust and flavorful marinade, this dish is sure to be a hit with your family and friends. So next time you're in the mood for some fried chicken, try making this mahogany fried chicken recipe. You won't be disappointed.
