Time 25m

Number Of Ingredients 18

1 tablespoon vegetable oil
1 lb. ground beef
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano (or Italian seasoning)
1/2 teaspoon salt (or to taste)
1/4 teaspoon ground black pepper (or to taste)
2 tablespoons tomato paste
1/4 cup beef broth or water
8 small flour tortillas
1 cup Mexican cheese blend, shredded
2 medium tomatoes, diced
1 medium red onion or white onion, diced
1/4 cup fresh cilantro, finely chopped
1/4 cup sour cream (optional)
1 lime, wedged

Steps:

  • Heat oil in a large skillet for 2 minutes over medium-high heat until the hot oil sizzles. Add ground beef and stir well to cook evenly until browned, about 6-8 minutes. Make sure to break up beef into small pieces to help even browning.
  • Add cumin, chili powder, paprika, garlic powder, oregano, salt, pepper, tomato paste and beef broth. Reduce heat to medium and let the mixture simmer for 3-5 minutes until the sauce thickens a bit, stirring occasionally. Turn off heat and set aside.
  • Heat the soft flour tortillas according to the package instructions, or heat in an ungreased skillet over medium-high heat for 30 seconds per side. You can also heat it directly on a gas burner for a few seconds to get char marks on the edges.
  • Add 2-3 tablespoons of the ground beef mixture on each tortilla. Top with cheese, onion, tomato and cilantro. Add a dollop of sour cream and a squeeze of fresh lime juice, to taste.

Time 55m

Yield 6

Number Of Ingredients 12

1 pound ground beef
1 small onion, finely chopped
1 ½ cups water
¼ cup salted butter
1 (6 ounce) package cornbread stuffing mix (such as Kraft® Stove Top®)
1 (14.5 ounce) can diced tomatoes with jalapeno
1 (10 ounce) can diced tomatoes with green chile peppers
1 tablespoon chili powder
1 teaspoon ground cumin
½ teaspoon hot pepper sauce (such as Tabasco®), or more to taste
1 (8.75 ounce) can sweet corn, drained
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • While the beef is cooking, make stuffing. Bring water and butter to a boil in a medium saucepan. Stir in stuffing mix; cover. Remove from heat. Let stand for 5 minutes. Fluff with a fork.
  • Stir diced tomatoes, chili powder, cumin, and hot sauce into the beef mixture. Simmer for 2 minutes. Add corn and Cheddar cheese. Simmer until cheese is melted completely, about 1 minute. Transfer mixture to a casserole dish. Spread cornbread stuffing evenly over the top.
  • Bake in the preheated oven until browned, 20 to 30 minutes.

Tips:

  • Choose high-quality ground beef for the best flavor and texture. An 80/20 blend of lean to fat is a good option, as it will provide enough moisture to keep the beef juicy.
  • Use a variety of spices to create a flavorful taco filling. Chili powder, cumin, garlic powder, and onion powder are all classic ingredients in Mexican cuisine.
  • Don't overcook the ground beef. Cook it until it is just cooked through, or it will become dry and tough.
  • Use a large skillet or Dutch oven to cook the ground beef so that it has plenty of room to brown.
  • Once the ground beef is cooked, drain off any excess grease. This will help to reduce the fat content of the dish.
  • Store the cooked ground beef in an airtight container in the refrigerator for up to 3 days, or in the freezer for up to 3 months.

Conclusion:

Make-ahead Mexican ground beef is a versatile and delicious dish that can be used in a variety of recipes. It's perfect for busy weeknights when you don't have a lot of time to cook. Simply brown the ground beef and season it with your favorite spices, then freeze it in individual portions. When you're ready to eat, thaw the ground beef and add it to your favorite Mexican dish. Whether you're making tacos, burritos, enchiladas, or a Mexican casserole, make-ahead Mexican ground beef will save you time and effort. So next time you're planning a Mexican feast, be sure to make a batch of make-ahead Mexican ground beef. You'll be glad you did!
