MAMA'S QUESADILLAS

This is how I make them at home! These are dsil's favorite- with no onion and tomato and extra sour cream! lol The great thing about quesadill's is you can tailor them to your exact tastes and it is a great way to sneak some veggies into those veggie haters. Try adding some tomato, avocado, spinach, mushrooms, etc.. inside the tortilla. Great way to introduce herbs too! Try cilantro, cumin, etc here! hope you enjoy!

Number Of Ingredients 6

4 ounces monterey jack cheese or 4 ounces monterey jack pepper cheese
1/4 cup green onion, chopped, white and green parts- about 4
1/2 cup cooked chicken, shredded (optional)
4 flour tortillas
salsa (optional)
sour cream (optional)

Steps:

  • Heat a skillet over medium high heat.
  • Meanwhile, sprinkle cheese, chicken- if using, and onion on top of one tortilla. Then sprinkle a little more cheese on top. Top with another flour tortilla to make a sandwich.
  • Spray hot skillet with cooking spray. Lay tortilla sandwich in pan and cook til browned.
  • Flip gently to other side and cook until browned. Remove to cutting board and let rest for about 2 minutes before cutting.
  • Slice with a knife into four pieces- like cutting a pie or a pizza.
  • Serve and enjoy!

4 teaspoons canola oil
8 corn or flour tortillas
2 cups grated cheese, like queso blanco or Monterey Jack
1 cup filling, room temperature (optional)
Sour cream, for serving (optional)
Tomato Salsa, for serving (optional)
Chunky Guacamole, for serving (optional)

Steps:

  • Heat a skillet over medium heat, and add 1/2 teaspoon oil. When oil is hot, place 1 tortilla in pan; sprinkle with 1/4 cup grated cheese, 1/4 cup filling, if using, and another 1/4 cup grated cheese. Top with second tortilla, and cook until cheese is melting and the bottom of tortilla is golden brown. Flip, and cook until golden on both sides, the cheese is melted, and the filling hot.
  • To serve, cut quesadillas into wedges, and serve with sour cream, salsa, and guacamole on the side, if desired. Repeat with the remaining ingredients, serving each quesadilla hot from the pan.

1 (1.27 ounce) packet fajita seasoning
1 tablespoon vegetable oil
2 green bell peppers, chopped
2 red bell peppers, chopped
1 onion, chopped
10 (10 inch) flour tortillas
1 (8 ounce) package shredded Cheddar cheese
1 tablespoon bacon bits
1 (8 ounce) package shredded Monterey Jack cheese

Steps:

  • Preheat the broiler. Grease a baking sheet.
  • Toss the chicken with the fajita seasoning, then spread onto the baking sheet. Place under the broiler and cook until the chicken pieces are no longer pink in the center, about 5 minutes.
