2 teaspoons cornstarch
1/4 cup lemon juice
2 tablespoons butter
2 cans (15 ounces each) sliced beets, drained
1 can (11 ounces) mandarin oranges, drained

  • In a large saucepan, combine the sugar and cornstarch. Add lemon juice and butter. Bring to a boil; cook and stir for 2 minutes or until thickened. , Stir in beats; heat through. Gently stir in oranges; heat through.

1/4 cup sugar
2 tsp. cornstarch
1/4 cup lemon juice, fresh or concentrate but fresh is better
2 Tbl. butter
2 (15 oz.) cans sliced beets, drained
1 (11 oz.) can mandarin oranges, drained

Steps:

  • 1. In a large saucepan, combine the sugar and cornstarch. Add lemon juice and butter. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in beats; heat through. Gently stir in oranges; heat through.

  • Choose the right beets: Look for beets that are small to medium in size, with smooth, firm skin. Avoid beets that are bruised or have blemishes.
  • Trim the beets: Cut off the tops and bottoms of the beets, leaving about 1 inch of stem attached. Peel the beets with a vegetable peeler.
