Number Of Ingredients 11

3 cups Bread Flour
2 cups Sugar
1 teaspoon Baking Soda
1 teaspoon Salt
1 teaspoon Cinnamon
1 cup Chopped Nuts
3 Eggs (well beaten)
1 1/2 cups Oil
1 teaspoon Vanilla
3 Bananas (soft, smashed)
11 ounces Mandarin Oranges (drained)

Steps:

  • Preheat oven to 325 degrees.
  • Combine all dry ingredients, including chopped nuts, in a large mixing bowl.
  • Stir in well beaten eggs, oil, bananas, mandarin oranges and vanilla.
  • Pour mix into two greased bread pans.
  • Heat for 50-60 minutes until golden brown.

Tips:

  • Choose the right oranges: For the best flavor, use ripe, juicy oranges with a deep orange color. Avoid oranges that are green or have blemishes.
  • Zest the oranges before juicing them: This will release the flavorful oils from the orange peel and give your bread a more intense orange flavor.
  • Don't overmix the batter: Overmixing will make the bread tough. Mix just until the ingredients are combined.
  • Bake the bread until a toothpick inserted into the center comes out clean: This will ensure that the bread is cooked through.
  • Let the bread cool completely before slicing it: This will help the bread to hold its shape and prevent it from crumbling.
