Time 25m

Yield 6 serving(s)

Number Of Ingredients 12

3 tablespoons rice vinegar
2 tablespoons orange juice
1 tablespoon honey
1 teaspoon sesame oil
1/8 teaspoon ground cinnamon
1 (11 ounce) can mandarin orange segments, drained
3 cups bite-size pieces lettuce
2 cups bite-size pieces spinach leaves (cleaned, no stems)
1 cup thinly sliced fresh mushrooms
1 cup bean sprouts
1/3 cup thinly sliced red onion
2 teaspoons sesame seeds, toasted

Steps:

  • Mix (or shake) the first five ingredients until well blended.
  • Pour mixture over mandarin orange segments in a salad bowl (I like to use a glass or clear salad bowl for this recipe), cover with plastic wrap and refrigerate until well chilled.
  • About 15-20 minutes.
  • Add the lettuce, spinach, mushrooms, bean sprouts, onions to the mandarins in the salad bowl and toss well.
  • Sprinkle with sesame seeds.

Tips:

  • Choose flavorful and fresh ingredients: Opt for oranges that are brightly colored and firm, as they will yield the most juice and sweetness. Select tender and crisp greens like romaine lettuce or baby spinach for a vibrant salad base. Use crunchy vegetables like carrots, celery, and bell peppers for added texture and crunch.
  • Prepare the dressing in advance: Making the dressing ahead of time allows the flavors to meld and develop, resulting in a more harmonious taste. This also saves time when assembling the salad at the last minute.
  • Toss the salad gently: To prevent bruising the delicate greens and vegetables, use a light touch when tossing the salad. This helps evenly distribute the dressing without breaking down the ingredients.
  • Adjust the sweetness and acidity to your liking: Taste the dressing and adjust the amount of sugar or vinegar based on your preference. You can also add a pinch of salt or black pepper for extra flavor.
  • Serve the salad immediately: This salad is best enjoyed fresh, as the oranges and vegetables tend to release their juices over time, which can dilute the dressing and make the salad soggy.

Conclusion:

The Mandarin Orange Mixed Salad offers a delightful blend of sweet, tangy, and crunchy elements, making it a refreshing and flavorful side dish or light meal. With its vibrant colors and textures, this salad is sure to impress your taste buds and add a touch of zest to any gathering. Whether you're hosting a summer barbecue, a potluck dinner, or simply enjoying a light lunch, this salad is a perfect choice for those seeking a healthy and delicious dish. So, gather your ingredients, put on your apron, and embark on a culinary journey that will leave you craving for more. Happy cooking!
