MANGO, PASSION FRUIT AND BANANA PUNCH
Fresh passion fruit is best for this punch; however, if that's hard to find, frozen purée or bottled nectar may be used instead. Mango purée also may be substituted for fresh mangoes. Saveur Magazine, August/07. Just imagine yourself on the beach with the hot sand, the wind blowing in your hair and not a care in the world.

Steps:
- In a small pan, bring the orange juice and 140g/5oz of the sugar slowly to the boil. Cut the passion fruit in half and scoop the pulp into the pan. Stir in the mango slices and when the mixture has reached boiling point again, remove the pan from the heat.
- Peel the bananas and slice each one diagonally into five. Pour the lime juice over the banana slices and set aside. Sprinkle the remaining sugar evenly over the base of a large heavy-based frying pan. Place the pan over a medium heat until the sugar has dissolved and turned into a golden caramel. Toss the bananas into the pan and leave for 3-4 minutes, turning once.
- Turn the heat down and stir in the passion fruit and mango mixture. Heat for a further 2 minutes then spoon into bowls. Serve warm with a sprinkling of lime zest. Can be made up to a day ahead and chilled, then gently reheated before serving.

MANGO PASSION FRUIT CRUMBLE
I live in Cambodia, and from January to May the markets are always full of ripe juicy mangoes. The problem is, I've never really found a way to use them in a dessert. So when I was looking at a recipe for an apple crumble I decided to substitute the apple with mango and with a few of my own alterations, it's been a family favorite! The passion fruit really brings that extra tangy taste to the mangoes. Serve this dish with vanilla ice cream or even some plain youghurt, it's delicious.

Tips:
- Choose ripe fruits for the best flavor. If your fruits are not ripe, you can speed up the ripening process by placing them in a paper bag with an apple or banana.
- Use fresh fruit juice for the best flavor. If you don't have fresh fruit juice, you can use bottled fruit juice or a fruit-flavored soda.
- Adjust the amount of sugar to taste. If you like your punch sweeter, add more sugar. If you prefer a less sweet punch, use less sugar or omit it altogether.
- Garnish your punch with fresh fruit slices, mint leaves, or a sprinkle of nutmeg.
- Serve your punch chilled for the best flavor.
Conclusion:
Mango, passion fruit, and banana punch is a delicious and refreshing tropical drink that is perfect for any occasion. It is easy to make and can be customized to your liking. So next time you are looking for a refreshing and flavorful drink, give this punch a try!
