1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
1 cup warm 2% milk (110° to 115°)
1/3 cup butter, melted
1/4 cup sugar
1 large egg, room temperature
1 large egg yolk, room temperature
1/2 teaspoon salt
5 cups all-purpose flour
TOPPING:
2/3 cup maple syrup
2 tablespoons butter
1 cup packed brown sugar
1/2 teaspoon ground cinnamon
3 tablespoons butter, melted

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the milk, butter, sugar, egg, egg yolk, salt and 3 cups flour. Beat on medium speed for 3 minutes.   • Cook the maple bread in two batches: Heat a large, heavy skillet over medium heat and, when hot, add 1/4 cup of the maple syrup, 1 1/2 tablespoons of the butter and a pinch of salt. Add 4 slices of the bread and immediately flip to coat in the buttery maple syrup. Cook, flipping often with a butter knife, until the bread is lacquered with the syrup and takes on a toasted look and the bottom of the pan is coated with just a dry film, about 4 minutes.

1 package active dry yeast
½ cup milk
½ cup maple syrup
3 tablespoons butter
¾ teaspoon salt
1 cup shredded apple
2 eggs, lightly beaten
1 teaspoon maple flavoring
1 ½ cups peeled and finely chopped apple
½ cup finely chopped toasted walnuts
½ cup packed brown sugar

1/4 cup maple syrup
4 tablespoons sweet butter
1 teaspoon salt
1 package active dry yeast
1/4 cup warm water (about 110 degrees)
1 teaspoon sugar
1 egg beaten
4 cups (approximately) unbleached all-purpose flour

Steps:

  • Place milk, maple syrup, butter and salt in a saucepan and scald. Allow to cool to lukewarm.

1 (600 g) package maple loaf bread
1/2 cup unsalted butter, softened
1 (140 g) package dried apricots, thinly sliced
2 cups whole milk
2 cups whipping cream
1/8 teaspoon salt
2 vanilla beans, sliced in half lengthwise
3 eggs
1/2 cup granulated sugar
1/4 cup apricot jam

Steps:

  • Preheat oven to 325°F (160°C). Grease 13 X 9-inch (3 L) glass baking dish with 2 tbsp (25 ml) butter.
  • Discard end slices of loaf. Spread 1/2 cup (125 ml) butter evenly over one side of each bread slice.   • Bake in centre of oven for 40 to 45 minutes, pressing bread down gently with spatula at halfway point, or until puffed and set around edges with a slight jiggle in centre. Transfer pudding in water bath to rack to cool.
  • Meanwhile, heat jam with 2 tbsp (25 ml) water in small saucepan over low heat for 3 minutes, stirring occasionally, or until liquefied. Carefully remove pudding from water bath; brush surface with warmed jam. Serve hot or at room temperature.
