CRANBERRY, MAPLE & PECAN PUDDING

Cranberry, maple & pecan pudding image

Dairy-free, wheat-free and gluten-free - this Christmas pudding is moist and has a real zing. A less rich, more refreshing way to round off Christmas dinner

Provided by Good Food team

Categories     Dessert, Dinner

Time 3h30m

Number Of Ingredients 15

100g each semi-dried prunes and date , stoned and chopped
100g each raisins and sultanas
100g pack dried cranberry
170g gluten-free flour
1 tsp gluten-free baking powder
100g pack pecan , roughly chopped
2 tsp mixed spice
grated zest and juice of 2 oranges
100g dark muscovado sugar
5 tbsp maple syrup
2 eggs , beaten
100ml sunflower oil
oil , for greasing
100g fresh cranberry
5 tbsp maple syrup

Steps:

  • Put all the ingredients for the pudding into a big bowl and stir together until well mixed. Don't be put off by the consistency of the mixture - it is quite wet. Lightly oil a 1.5 litre pudding basin. Tip the mixture into this and press down. Make a cover for the pudding basin using a double layer each of oiled greaseproof paper and aluminium foil. Make a pleat in the middle of these sheets to allow for expansion of the pudding. Press it over the top of the pudding basin and secure it well with a double piece of string. Use a little extra string to make a handle for ease of lifting in and out of the boiling water.
  • Cook the pudding in a large pan with a well-fitting lid. There should be enough boiling water to come two-thirds up the sides of the basin at all times - so keep an eye on it. Cook the pudding for 3 hrs.
  • To make the topping, cook the cranberries in the maple syrup until they burst open and become syrupy. Once the pudding is cooked, remove the cover and carefully tip it onto a large serving plate. Spoon the hot cranberry and maple syrup over the top and serve straight away.

Apple Cider Rice Pudding with Candied Pecans image

A sweet, appley and warmly spiced rice pudding is the perfect ticket for fall. This dessert is easy to make and is delicious served warm or cold.

Provided by Erin Jeanne McDowell

Categories     dessert

Time 35m

Yield 6 servings

Number Of Ingredients 15

3 cups whole milk
2 cups apple cider
1/2 cup jasmine rice
1/3 cup dark brown sugar
1/2 teaspoon fine sea salt
1/2 cup heavy cream
2 tablespoons unsalted butter
1 1/2 teaspoons pure vanilla extract
Ground cinnamon, as needed, for finishing
1 cup granulated sugar
1 teaspoon ground cinnamon
Kosher salt
2 cups pecan halves
1 tablespoon heavy cream
1 teaspoon pure vanilla extract

Steps:

  • Start the rice pudding: In a medium pot, combine the milk, cider, rice, brown sugar, and salt over medium heat. Stirring frequently, heat the mixture to a simmer. Continue to simmer over medium-low heat, stirring frequently, until the rice is tender and absorbs most of the liquid and the liquid becomes thick, 25 to 30 minutes.
  • While the pudding cooks, make the candied pecan topping: In a medium pot, combine the granulated sugar with the cinnamon, 1/4 cup water and a pinch of salt. Begin to heat over medium heat until the mixture melts, stirring gently occasionally.
  • Cook the mixture, stirring frequently, until light golden brown and boiling. Continue cooking, swirling frequently without stirring, until golden brown and caramelized. Add the pecans and continue to cook over medium heat, stirring frequently to glaze and coat the nuts fully. Continue cooking, tossing, until the mixture no longer appears liquid and the nuts become more difficult to stir, 3 to 5 minutes. Remove from the heat, and stir in the cream and vanilla, stirring well to combine.
  • Pour onto a parchment paper-lined baking sheet to cool completely, 10 to 15 minutes, then coarsely chop.
  • Finish the rice pudding: When the rice pudding has reached the appropriate doneness, turn the heat to low, and stir in the cream, butter, and vanilla. Cook until the mixture is heated through, 2 to 3 minutes.
  • Serve the rice pudding warm or pour it into a heatproof bowl, cover directly with plastic wrap and refrigerate until ready to serve cold. Serve dusted with cinnamon and topped with the coarsely chopped candied nuts.

100g self-raising flour
½ tsp ground cinnamon
½ tsp ground nutmeg
50g butter
75g dark muscovado sugar
1 tbsp maple syrup
1 medium egg , beaten
3 tbsp semi-skimmed milk
40g pecan nuts, chopped
50g raisin
25g butter
3 tbsp double cream
2 tbsp maple syrup

Tips:

  • Use high-quality ingredients. The better the quality of your ingredients, the better your rice pudding will be. Use fresh milk, eggs, sugar, and rice. If you can, use organic ingredients whenever possible.
  • Cook the rice pudding slowly and gently. Do not boil the rice pudding, or it will curdle. Instead, bring it to a simmer and then reduce the heat to low. Stir the rice pudding frequently to prevent it from sticking to the bottom of the pot.
  • Use a heavy-bottomed pot. This will help to distribute the heat evenly and prevent the rice pudding from burning.
  • Stir in the flavorings at the end of the cooking time. This will help to preserve their delicate flavors.
  • Serve the rice pudding warm or cold. Rice pudding is delicious served either way. If you are serving it cold, be sure to chill it for at least 2 hours before serving.

Conclusion:

Maple pecan rice pudding is a delicious and easy-to-make dessert that is perfect for any occasion. It is a great way to use up leftover rice, and it can be made ahead of time and refrigerated for later. Whether you serve it warm or cold, topped with whipped cream or fresh fruit, this rice pudding is sure to be a hit.
