1/2 cup pure maple syrup
2 cups granulated sugar
1/2 teaspoon fresh lemon juice
2 ounces unsweetened chocolate, chopped into 1/4-inch pieces

  • Preheat the oven to 325 degrees.
  • Toast the walnuts on a baking sheet in the preheated oven for 8 minutes. Remove from the oven and cool to room temperature.
  • Heat the maple syrup in a 1 1/2-quart saucepan over medium-high heat. When the syrup begins to boil, reduce the heat to medium and allow the syrup to continue to boil and thicken for 10 minutes, stirring occasionally with a metal spoon. 1 cup brown sugar
1 cup white sugar
1 cup walnuts
1/2 cup evaporated milk
2 tablespoons butter
1 teaspoon vanilla extract
1 teaspoon cinnamon

  • Combine sugars and milk in saucepan over medium heat. Stirring, with a wood spoon, do not scorch milk.
  • Spray baking non-stick spray on cookie sheet or aluminium foil laid on top of thick towels.

  • Once temperature has been reached, remove from heat and let cool 5 minutes.

2/3 cup heavy whipping cream
1/2 cup maple syrup
2 tablespoons butter
3/4 cup coarsely chopped pecans, toasted

  • In a heavy 1-qt. saucepan, combine sugar, cream and syrup. Cook and stir over medium heat until mixture boils. Reduce heat to medium-low. Cook, uncovered, until a candy thermometer reads 234° (soft-ball stage), stirring occasionally., Remove from the heat. Add butter; do not stir. Cool, without stirring, to 160°. Stir in pecans.   • Preheat oven to 375°F. Butter 13x9x2-inch baking dish. Transfer bread mixture to prepared dish. Bake until puffed and golden and toothpick inserted into center comes out clean, about 40 minutes. Cool slightly. Cut into 6 to 8 pieces. Place 1 piece pudding on each plate. Place scoop of ice cream atop pudding, drizzle with maple syrup, sprinkle with praline, and serve.
