Number Of Ingredients 10

1 3/4 cups all-purpose flour
1/2 cup powdered sugar
1 cup butter, softened
4 large eggs
1 1/2 cups sugar
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/3 cup frozen margarita mix concentrate, thawed
2 teaspoons fresh lime zest
powdered sugar

Steps:

  • In a big mixing bowl, add all the crust ingredients; mix on low speed until crumbly.
  • Flour your hands/fingers; press mixture firmly in the bottom of an ungreased 13x9 inch baking dish.
  • Bake at 350­° for 20 to 25 minutes or until a light golden brown.
  • In another bowl, beat eggs.
  • Add sugar, flour, and baking powder; stir to blend.
  • Add in margarita mix and lime peel; stir to blend.
  • Take crust out of the oven.
  • Pour filling over the warm crust; place back in the oven.
  • Bake 18-22 minutes or until the top is golden brown and the filling is set.
  • Let cool until completely cooled.
  • Right before serving, sift powdered sugar over the top; cut into bars.

1 3/4 cups Gold Medal™ all-purpose flour
1/2 cup powdered sugar
1 cup butter, softened
4 eggs
1 1/2 cups granulated sugar
1/4 cup Gold Medal™ all-purpose flour
1/2 teaspoon baking powder
1/3 cup frozen margarita mix concentrate, thawed
2 teaspoons grated lime peel
1 tablespoon powdered sugar

Steps:

  • Heat oven to 350°F. In large bowl, mix base ingredients with electric mixer on low speed until crumbly. With floured fingers, press mixture firmly in bottom of ungreased 13x9-inch pan. Bake 20 to 25 minutes or until light golden brown.
  • Meanwhile, beat eggs slightly in large bowl. Mix in granulated sugar, 1/4 cup flour and the baking powder until well blended. Stir in margarita mix and lime peel.
  • Remove pan from oven. Pour filling over warm base. Bake 18 to 22 minutes longer or until top is golden brown and filling is set. Cool completely, about 1 hour.
  • Just before serving, sprinkle bars with 1 tablespoon powdered sugar. Cut into 6 rows by 6 rows.

Shortbread base:
1 1/2 sticks (3/4 cup) unsalted butter
2 cups all-purpose flour
1/2 cup packed light brown sugar
1/2 teaspoon salt
Cheesecake:
16 ounces cream cheese, softened
2 large eggs
3/4 cup sugar
3 tablespoons cornstarch
1/4 cup lime juice
1 1/2 ounces tequila
1 1/2 ounces triple sec
1 tsp lime zest (1 lime)
hot shortbread base

Steps:

  • Preheat oven to 350°F. Shortbread base: Cut butter into 1/2-inch pieces. In a food processor process all ingredients until mixture begins to form small lumps. Sprinkle mixture into a 13 x 9 x 2-inch baking pan and with a metal spatula press evenly onto bottom. Bake shortbread in middle of oven until golden, about 20 minutes. While shortbread is baking, prepare topping. Cheesecake topping: In a bowl whisk cream cheese until smooth. Whisk in sugar, cornstarch, lime juice, tequila, & triple sec. Whisk in eggs & zest. Evenly spread over hot shortbread and pour cream-cheese mixture over it. Bake in middle of oven until slightly puffed, about 30 minutes. Cool completely in pan and cut into 24 bars. Bar cookies keep, covered and chilled, 3 days.
