Yield About 25 hors d'oeuvres, or 12 to 14 servings

Number Of Ingredients 11

1 cup soy sauce
Juice of 1 lemon
1/4 cup dry Sherry
2 tablespoons finely chopped fresh ginger
1/4 cup chopped scallions
1 clove garlic, finely chopped
Pinch of red pepper flakes
2 tablespoons freshly ground black pepper
1 pound yellowfin tuna, deep red in color, cut in half lengthwise
1 large daikon, scraped with a vegetable peeler and cut into 1/4-inch slices
Shaved pickled ginger for garnish (available at Oriental markets)

Steps:

  • In a glass or ceramic pan, combine all the ingredients for the marinade. Add the tuna, turning it in the pan to cover with the marinade. Cover the pan and refrigerate for at least one hour, but not more than two hours. Turn the tuna from time to time. Drain, reserving the marinade.
  • To prepare, preheat a charcoal grill or broiler until as hot as possible. Grill the tuna on one side for one to two minutes. Turn and grill another one to two minutes. The tuna should be seared on the outside and almost raw within.
  • To serve, cut the tuna into quarter-inch slices. Place each slice on a piece of daikon and top with a shaving of pickled ginger. Spoon a bit of the marinade over the cooked tuna.

Time 30m

Yield 4 servings

Number Of Ingredients 16

4 block pieces #1 ahi tuna, 6 ounces each
Salt and black pepper
2 cups edamame, chopped up
2 shallots, rough chopped
2 eggs
1 cup rice flour
Soda water, to bind
Canola oil, for frying plus 1/4 cup, for salad dressing
1 teaspoon wasabi powder
1 tablespoon naturally brewed soy sauce
2 tablespoons rice vinegar
1 teaspoon sesame oil
2 packages daikon sprouts
1 large carrot, peeled and shredded
1 tablespoon green scallions, sliced
1 tablespoon toasted sesame seeds, for garnish

Steps:

  • Pre-heat a fryer to 400 degrees F. Season the ahi on all sides with salt and pepper. In a food processor, add the edamames and shallots, pulse into small pieces. Add the eggs and pulse to mix.
  • Meanwhile, make tempura batter whisking the flour with soda water until a thick paste is formed. Fold the edamames with the tempura. Dip the ahi in the batter and fry for 3 to 4 minutes, until golden brown. Season lightly with salt and slice in half on the bias. The middle should be cool and rare.
  • To make the salad, in a small bowl, whisk together the wasabi, soy, vinegar, sesame oil, and 1/4 cup canola oil. Toss vinaigrette (save a little for garnish) with the sprouts, carrots, scallions, and season. Check for balance of flavor.
  • Using a 3 to 4 inch ring mold (2 to 3 inches tall), stuff with the salad and drizzle vinaigrette around. Place the ahi on top and de-mold. Garnish with sesame seeds.

MARINATED DAIKON AND CARROT SALAD (NAMASU)

Marinated Daikon and Carrot Salad (namasu) image

I've been making this for years. I took a recipe and changed it, it had 30g of carrots, and I like about equal weight of carrot and daikon. I make this using my zester which is nothing like a Microplane zester. It's small, hand held tool (with 6 holes at one end) which you drag down the food to get long thin ribbons. Works really well for these Japanese salads.

Time 25m

Yield 6 serving(s)

Number Of Ingredients 9

350 g white radishes or 350 g daikon radishes
350 g carrots
1/2 teaspoon salt
4 tablespoons rice wine vinegar
1 teaspoon dashi powder, dissolved in
1 tablespoon hot water
1 tablespoon mirin
1 tablespoon sugar
salt

Steps:

  • Cut the carrot and daikon into the thinest strips you can; I use a zester to do this and it works really well.
  • Sprinkle the vegetables with the half teaspoon of salt and allow to stand in a colander 10-15 minutes or until limp.
  • Transfer to a bowl.
  • Mix the remaining ingredients together and pour over the vegetables.
  • Taste for salt.
  • This can be used immediately, but marinating it for 24 hours will improve it; just keep it well covered as the radish can be a bit"smelly'" in your fridge.

MARINATED TUNA STEAK

Tuna steaks marinated in soy, lemon and mustard

Yield Serves 4

Steps:

  • Prick tuna steaks all over with a fork and place in a shallow dish.
  • Mix all other ingredients together and pour over steaks. Cover and put in fridge for 1 to 3 hours.
  • Remove tuna from the marinade. Shake excess moisture from the steaks. Pre-heat oiled griddle pan.
  • Pour the marinade into a small saucepan and bring to a boil. Reduce heat to medium-low and cook marinade at a simmer for 10 minutes.
  • Cook tuna on preheated griddle pan, basting with boiled marinade, until cooked through, 5 to 6 minutes per side. Serve with lemon wedges if required and salad and/or couscous.

Tips:

  • To select the freshest tuna, look for fish that is firm to the touch and has a bright red color. Avoid any tuna that is slimy or has a dull color.
  • When marinating the tuna, use a non-reactive bowl, such as a glass or ceramic bowl. This will prevent the marinade from reacting with the metal and imparting a metallic taste to the fish.
  • The longer you marinate the tuna, the more flavorful it will be. However, do not marinate the tuna for more than 24 hours, as this can make the fish too soft.
  • When searing the tuna, be sure to use a very hot skillet. This will help to create a nice crust on the outside of the fish while keeping the inside rare.
  • If you are using a sushi-grade tuna, you can skip the searing step and serve the fish raw. However, be sure to slice the fish very thinly before serving.
  • Daikon radish is a great accompaniment to tuna. It is crunchy and refreshing, and it helps to balance out the richness of the fish.

Conclusion:

Marinated tuna on daikon is a delicious and healthy dish that is perfect for a summer meal. The tuna is marinated in a flavorful mixture of soy sauce, mirin, sake, and ginger, then seared and served on top of a bed of daikon radish. This dish is sure to please everyone at your table.
