SMOKY FARMER'S MARKET SOUP (IN A BASKET OR A BOWL)

Smoky Farmer's Market Soup (In a Basket or a Bowl) image

This soup gets its smoky flavor from chili powder, cumin, smoked paprika, chipotle chili pepper and roasted red peppers. Add fresh vegetables, lentils, and pasta, and you've got a healthy, low-fat filling soup to warm you on a cold day. Serve with hot fresh bread and butter or cornbread for mopping up the juices and a green salad to complete your meal. Give this soup as a gift by assembling the main ingredients in a nice basket lined with country print fabric or a red bandana. Include the cooking instructions on a cute recipe card. Or make up the soup and deliver it in a large stoneware bowl, with a loaf of crusty bread and some whipped butter. You can make this as a vegetarian soup or add a high quality grass-fed or free-range ground beef for added protein.

  • Use a good quality stock: The stock is the base of your soup, so it's important to use a good one. You can make your own stock or use a store-bought stock. If you're using a store-bought stock, be sure to choose one that is low in sodium.
