1 ripe melon (such as Casaba, Cantaloupe, or Honeydew)
1/2 inch fresh gingerroot
fresh mint and fresh edible flower, such as pansy to garnish

Steps:

  • Slice melon into serving wedges and scoop out seeds.
  • Cut along the rind to free the flesh, then cut across and lengthwise into attractive bite-sized pieces.
  • Peel 1/2 inch or so of the ginger root and grate onto melon wedges.
  • Garnish, and serve.

1 large cantaloupe
1 package (3 ounces) strawberry banana gelatin
1 cup boiling water
1/2 cup unsweetened applesauce
1 cup sliced fresh strawberries

Steps:

  • Cut melon in half lengthwise from bud to stem end; discard seeds. Cut a thin slice off the bottom of each half so melon sits level; pat dry. , In a large bowl, dissolve gelatin in boiling water. Stir in applesauce and strawberries. Pour into melon halves (discard any remaining gelatin mixture or save for another use). , Cover and refrigerate overnight. Just before serving, slice each melon half into 3 wedges.

¼ cup shredded mozzarella cheese
3 green onions, finely chopped
1 tablespoon olive oil
1 clove garlic, finely chopped

½ teaspoon ground black pepper
