Yield 8 tarts, 8 serving(s)

Number Of Ingredients 9

2 puff pastry sheets
30 g butter
1 onion, finely chopped
200 g ham, sliced
3 teaspoons Dijon mustard
250 g mascarpone cheese
2 bunches asparagus, trimmed, halved
1 egg, slightly beaten
1/2 cup parmesan cheese, shaved

Steps:

  • Preheat oven to 180 C, line 2 trays with baking paper.
  • Cut each pastry sheet into 4 squares, then lightly score a 2.5 cm border around each square.
  • Place squares on trays and chill.
  • Melt butter in frypan and cook onion for 3 - 4 minutes.
  • Finely chop ham in food processor.
  • Add onion, mustard and mascarpone and pulse to combine.
  • Season to taste.
  • Spread mixture within pastry border on each square.
  • Top with asparagus spears.
  • Brush pastry borders with beaten egg.
  • Bake 20 - 25 minutes till pastry is golden.
  • Serve topped with parmesan.

Tips:

  • Prep your ingredients: Before you start cooking, make sure all your ingredients are prepped and measured. This will help you save time and avoid scrambling during the cooking process.
  • Use a non-stick pan: A non-stick pan will help prevent the tart from sticking and make it easier to flip.
  • Cook the asparagus until it is tender-crisp: You don't want the asparagus to be too soft, so cook it until it is just tender-crisp.
  • Don't overfill the tart shell: The tart shell is delicate, so don't overfill it with the filling. Otherwise, the tart may crack or break.
  • Bake the tart until the crust is golden brown: The tart is done baking when the crust is golden brown and the filling is set.

Conclusion:

This mascarpone ham and asparagus tart is a delicious and easy-to-make dish that is perfect for any occasion. The combination of creamy mascarpone, salty ham, and fresh asparagus is simply irresistible. Serve this tart warm or at room temperature, and enjoy!
