BAKED MASHED POTATOES WITH PARMESAN
The combination here of baked and mashed potatoes can be made in advance and reheated at serving time. A food mill or old-fashioned food ricer yields the best texture, but you can also mash the potatoes in any way you are accustomed. I like to use Idaho potatoes because they are less moist than many other types.

Tips:
- Choose the right potatoes: Yukon Gold, russet, and Idaho potatoes are all good choices for mashed potatoes. Yukon Golds are known for their creamy texture, while russets are more starchy and Idaho potatoes are a good all-around choice.
- Wash the potatoes thoroughly: This will help to remove any dirt or debris from the potatoes.
- Peel the potatoes if desired: Peeling the potatoes is not necessary, but it will give you a smoother mashed potato. If you do peel the potatoes, be sure to remove any eyes or blemishes.
- Cut the potatoes into evenly sized pieces: This will help them to cook evenly. Aim for pieces that are about 1-inch in size.
- Boil the potatoes until they are tender: The potatoes should be tender enough to easily pierce with a fork. This will take about 15-20 minutes.
- Drain the potatoes well: This will help to prevent the mashed potatoes from being watery.
- Mash the potatoes until smooth: You can use a potato masher, a ricer, or a food mill to mash the potatoes. If you use a food mill, you will get a smoother mashed potato.
- Add milk, butter, and seasonings: Start with a small amount of milk and butter, and then add more until you reach the desired consistency. Season the mashed potatoes with salt, pepper, and garlic powder to taste.
- Serve the mashed potatoes immediately: Mashed potatoes are best served hot. You can keep them warm in a slow cooker or in a covered dish in a warm oven.
Conclusion:
Mashed potatoes are a delicious and versatile side dish that can be served with a variety of meals. They are easy to make and can be customized to your liking. With a few simple tips, you can make the perfect mashed potatoes every time.
