Mashed Potato Topped Chicken Pot Pie image

Not your average pot pie. Simple to make and good for left overs. DH and DS gave rave reviews, I even got an "Its delicious" which is music to my ears. Feel free to use any left over veggies you may have, works well with corn, green beans, peas and carrots. My version of this is NOT diet. : - )

CREAMY TUNA AND MASHED POTATO PIE

Creamy Tuna and Mashed Potato Pie image

Quick and easy if you use pre prepared stuff, not as quick but just as easy if you do it all from scratch. It is up to you the type of cheese sauce and the kind of mashed potatoes you use, spice it up, or leave it simple. This is loved by kids and adults in my house. Time based on making cheese sauce and potatoes from scratch.

SAUSAGE, APPLE, AND ONION MASHED POTATO PIE

Sausage, Apple, and Onion Mashed Potato Pie image

This is a good fall dinner recipe that is sort of a pie--I originally finished my concoction before everyone got home! If you want, you can skip a few steps and this can be served as two dishes. Also, I do make this with chicken apple sausage, but I think it would be just as good with smoked turkey sausage. I hope that you like it!

HALIBUT POT PIE WITH MASHED POTATO CRUST

Halibut Pot Pie With Mashed Potato Crust image

This is from bon appetit magazine. I'm sure you could substitute any firm white fish for the halibut. It's best to warm the mashed potatoes in the microwave and adding more milk if necessary to make them spreadable.

MASHED POTATO PIE

Mashed Potato Pie image

This pie is very good. No...it does not taste like mashed potatoes. It has a custard pie taste. I usually use Pillsbury store bought crust instead of making one. What a delicious way to use up those extra mashed potatoes. This recipe came from one of my dearest friend and grandmother.

Provided by Betty Graves

Categories     Pies

Time 55m

Number Of Ingredients 8

1 c mashed potatoes (extra from when you have them from dinner)
3/4 c sugar
1/2 c milk
1 tsp nutmeg
1 tsp vanilla
1 Tbsp butter melted
2 eggs
1 pie crust store bought or make your own

Steps:

  • 1. Directions: Mix together all ingredients in a blender and pour into a deep pie crust. Sprinkle a little nutmeg on top of pie before baking.
  • 2. Bake at 350 for 45 minutes or until firm.

Tips:

  • Choose the right potatoes: Russet potatoes are the best choice for mashed potato pie because they are starchy and fluffy.
  • Boil the potatoes until they are very soft: This will make them easy to mash and will help the pie to be smooth and creamy.
  • Season the mashed potatoes well: Use salt, pepper, and garlic powder to taste.
  • Use a variety of cheeses: A combination of cheddar, mozzarella, and Parmesan cheese will give the pie a rich and flavorful taste.
  • Don't overmix the filling: Overmixing will make the filling dense and tough.
  • Bake the pie until the crust is golden brown and the filling is bubbly: This will take about 30-35 minutes.

Conclusion:

Mashed potato pie is a delicious and easy-to-make comfort food. It is perfect for a weeknight dinner or a special occasion. With its creamy filling and crispy crust, mashed potato pie is sure to be a hit with everyone at the table.
