6-8 medium Red Skin Potatoes, do not peel.
1/2 cup Buttermilk
1/4 cup Butter
1 heaping Tablespoon of Mayonnaise, or more if needed.
1/2 teaspoon Granulated Garlic Powder
Salt and Pepper to taste

Steps:

  • Wash the potatoes to remove any dirt and dust.
  • Place potatoes in a medium sized saucepot, cover with about 1 inch of water.
  • Place pot over medium heat and bring to a low boil.
  • Boil potatoes about 20-25 minutes, or until fork tender.
  • Remove potatoes from water, place in bowl and let cool a bit, do not discard potato water.
  • Using a potato masher, mash up the potatoes, skin and all, until creamy.
  • Add Buttermilk
  • Add Mayonnaise

1 1/2 cups loosely packed fresh Italian parsley (about 1 bunch)
1/4 cup olive oil
2 tablespoons chopped fresh chives
2 tablespoons fresh oregano leaves
1 small clove garlic
1/2 cup whole milk, warmed
4 tablespoons unsalted butter, melted
