Number Of Ingredients 16

1/2 pound sweet Italian sausage, removed from casing
1/2 pound hot Italian sausage, removed from casing
1/2 red bell pepper, sliced 1/4 inch thick
1/2 yellow bell pepper, sliced 1/4 inch thick
1 medium yellow onion, sliced into 1/8-inch half-moons
1 tablespoon olive oil
4 cloves garlic, peeled and crushed
1/4 teaspoon crushed red-pepper flakes
1 twenty-eight-ounce can whole, peeled tomatoes
1 six-ounce can tomato paste
Salt and freshly ground black pepper
6 fresh lasagna sheets
6 tablespoons fresh ricotta cheese, drained
1/4 bunch fresh spinach, washed
10 ounces fresh salted mozzarella, shredded
4 ounces freshly grated Parmesan cheese

Steps:

  • Saute sweet and hot sausage in a large skillet over medium heat; stir with a wooden spoon to break up the pieces until the sausage is well browned, about 8 minutes. Set sausage aside. Add the red and yellow pepper to the sausage fat, and saute until softened, 6 to 7 minutes. Set aside. Add the onions to the remaining fat, adding olive oil if necessary. Reduce heat to medium low, and saute until onions are very soft but not brown, 10 to 15 minutes. Set aside.
  • Heat the olive oil in a medium pot over medium heat. Add the garlic and crushed red-pepper flakes, and saute until garlic is translucent. Add the canned tomatoes and tomato paste. Reduce heat to low, and let the mixture simmer until it has thickened and reduced, about 30 minutes. Add the reserved cooked sausage. Season with salt and pepper. Remove from heat, and set aside.
  • Heat oven to 375 degrees. Spoon 1/2 cup tomato sauce into the bottom of an 8-by-8-inch oven-safe glass dish. Place a layer of fresh lasagna sheets on top. Spread half the ricotta over pasta; cover with spinach. Cover with second layer of fresh pasta. Sprinkle pasta with half the fresh mozzarella and half the Parmesan. Cover with 1 cup sauce and a third layer of pasta. Spread pasta with remaining ricotta, cover with sauteed onions and peppers. Cover with a final layer of pasta, top with remaining sauce, sprinkle with remaining mozzarella and Parmesan. Place in the oven to bake until sauce is bubbling and top is golden brown, 35 to 45 minutes. Serve.

GRANDMA GUARNASCHELLI'S LASAGNA WITH MINI BEEF MEATBALLS

Grandma Guarnaschelli's Lasagna with Mini Beef Meatballs image

I did not grow up with an Italian grandmother who was always around the house cooking. I saw her only on special occasions--but then she would cook everything under the sun. Even as a kid, I was so impressed that she went to such painstaking trouble to roll and brown little meatballs and layer them throughout her lasagna. It's worth it. When making classic lasagna bolognese, the ground beef and tomato meander beautifully together, but there is something about getting a bite of beef in a little meatball and then the separate sensation of the tomato sauce that makes the flavors pop even more.

Time 2h15m

Yield 8 to 10 servings

Number Of Ingredients 23

1/2 cup extra-virgin olive oil
1 medium yellow onion, finely chopped
5 garlic cloves, minced
Kosher salt
1 teaspoon crushed red pepper flakes
2 teaspoons sugar
1 (28-ounce) can whole peeled San Marzano tomatoes
2 teaspoons dried oregano
1 cup tightly packed fresh basil leaves
12 ounces 90% lean ground beef, preferably chopped sirloin
4 ounces ground veal
Kosher salt
1/2 cup panko bread crumbs, toasted, plus more if needed
3/4 cup freshly grated Parmigiano-Reggiano cheese
1/2 cup finely chopped fresh flat-leaf parsley leaves
1 large egg
3 medium garlic cloves, grated
1/3 cup canola oil
Kosher salt
1 pound dried lasagna sheets, preferably De Cecco brand
1 pound whole-milk mozzarella cheese, thinly sliced
1 pound whole-milk ricotta cheese
3 cups freshly grated Parmigiano-Reggiano cheese

Steps:

  • Make the sauce: In a medium skillet, heat the olive oil over medium heat. Add the onion and garlic and season with 1 tablespoon salt. Stir in the red pepper flakes and sugar, and cook for about 2 minutes. Then add the tomatoes, with their juices, and the oregano. Cook for a few minutes over high heat, stirring from time to time. Taste for seasoning, add the basil leaves, and remove from the heat.
  • Make the meatballs: Put the beef and veal in a large bowl and spread the meat all over the bottom of the bowl and up the sides a little. (This will help you to distribute the seasonings evenly through the meat.) Sprinkle with 2 teaspoons salt. Then sprinkle the bread crumbs, Parmigiano-Reggiano, and parsley all over the meat and use your hands to mix the ingredients together. In a small bowl, whisk together the egg and garlic. Drizzle the egg mixture over the meat. Mix the meat thoroughly with your hands.
  • Test a meatball: Form 1 small meatball (about 1 inch in diameter) with your hands. Heat a splash of the canola oil in a small skillet over high heat. When the oil begins to smoke lightly, add the meatball, lower the heat, and cook it over medium heat for 2 to 3 minutes. Taste for seasoning and texture. If it seems too wet, add some more bread crumbs to the mixture in the bowl. If it is too dry, add a splash of water. Adjust the seasoning of the mixture in the bowl as needed. Roll the remaining meat into balls; you should have about 40 very small meatballs.
  • Cook the meatballs: Heat a large skillet over medium heat and add half of the remaining canola oil. When the oil begins to smoke lightly, remove the pan from the heat and add half of the meatballs in a single layer, spreading them apart somewhat so they have a chance to brown instead of steaming. Return the pan to high heat and brown the meatballs, turning them so they brown all around, until medium-rare, 2 to 3 minutes. Use a slotted spoon or spatula to transfer them to a baking sheet lined with a kitchen towel to drain. Wipe out the skillet and repeat the process with the remaining canola oil and meatballs.
  • Cook the pasta: Bring 6 quarts water to a rolling boil in a large pot over high heat and season with 1/2 cup salt. The pasta water should taste like seawater. Add the lasagna sheets, stirring with a slotted spoon to make sure they do not clump or stick to the bottom, and cook for 4 minutes. Drain in a colander, rinse under cold water, and drain again. The pasta should still be very firm to the touch. Separate the sheets carefully so they don't stick together.
  • Preheat the oven to 350 degrees F.
  • Assemble the lasagna: Spoon a thin layer of the sauce over the bottom of a 9 x 13-inch baking pan. Arrange a layer of pasta sheets over the sauce. Sprinkle one-fourth of the mozzarella, ricotta, and Parmigiano-Reggiano over the pasta, and then add another thin layer of sauce. Dot the surface with about one-third of the meatballs, spacing them evenly. Repeat the layering process two more times. Add a final layer of pasta and top it with the remaining sauce and cheese.
  • Bake the lasagna: Cover the dish tightly with foil and put it in the center of the oven. Bake for 45 minutes. Then raise the oven temperature to 450 degrees F and remove the foil. Bake the lasagna until the top browns slightly, 10 to 15 minutes. Remove the lasagna from the oven and allow it to cool for 15 minutes or so before serving.

MARY'S LASAGNA

Mary's Lasagna image

The way to George's heart is definitely through his stomach. The E-Z Pass is with spaghetti and meatballs. We make several different sauces for our meatballs but none is better than the recipe we learned from George's mom, Mary Germon. Like most Italian-Americans, she called her sauce "gravy" and it was part of every holiday feast and any Sunday dinner. She sauced spaghetti or homemade ricotta ravioli with this gravy. It is also the first step to making Mary's Lasagne, another of her specialties. Mom had her own business and worked more than 40-hours a week. She was one of the original multi-taskers often doing the week's laundry and ironing at the same time as preparing a meal for the family. She had this gravy put together and bubbling on the stove in no time flat--something George always reminds Johanne when she frets and fusses over it. This recipe makes a large amount of sauce, but it takes no longer than a small batch and it freezes well. Save what you don't use for Mary's Lasagne, Ricotta Ravioli, or insurance in the freezer for an impromptu meal.

Time 1h45m

Yield about 8 to 10 generous servings

Number Of Ingredients 40

4 tablespoons unsalted butter, divided
1 cup (8-ounces) fresh ricotta
1 egg
2 tablespoons finely chopped fresh flat-leaf parsley
4 or 5 large fresh basil leaves
1/4 to 1/2 teaspoon sea salt, plus more for pasta water
1/2 batch Sunday Gravy with Sausages, recipe follows
1/2 batch Meatballs, recipe follows
Salt
1 recipe George's Fresh Pasta, recipe follows, cut into lasagne noodles (4 to 5-inches wide by 12 to 13-inches long)
1 1/2 cups freshly grated Pecorino Romano
1 ball fresh mozzarella, drained and sliced
1/4 cup extra-virgin olive oil
3 center-cut pork chops (total weight 1 to 1 1/4-pounds)
1 1/4 pounds Italian sweet sausage, halved horizontally
1 cup chopped onions
2 plump garlic cloves, finely minced
1/4 teaspoon fennel seeds
1/2 teaspoon fine sea salt
3 1/2 cups pureed canned tomatoes
4 1/2 cups water
1 (6-ounce) can (3/4 cup) tomato paste
Cheese rinds from Parmigiano-Reggiano or ends of Pecorino-Romano, optional
Mary's Meatballs, recipe follows
12 ounces ground beef
4 slices white sandwich bread, crust removed and cut into tiny cubes
3/4 cup milk
3/4 to 1 cup freshly grated Pecorino Romano
3 fresh basil leaves, torn into small pieces, optional
1 tablespoon freshly chopped flat-leaf parsley
1 egg, lightly beaten
1/2 teaspoon fine sea salt
In a large mixing bowl, combine the beef, bread and milk. Add the cheese, basil, parsley, egg, and salt. Mix gently but thoroughly. Form into small meatballs. Mary's were no more than 1 1/2-inch diameter.
2 jumbo eggs weighing 4 1/2 ounces in their shells, lightly beaten (slightly over
1/2 cup but less than 2/3 cup lightly beaten eggs measured in a liquid
measuring cup)
1 teaspoon fine sea salt
2 cups plus 2 tablespoons (10 ounces) all-purpose flour
1 tablespoon hot tap water
Lightly whip the salt into the beaten eggs. Set aside.

Steps:

  • Bring a large pot of water to a boil for the noodles. Put a bowl of ice water near the stove, and set out a few towels next to the bowl to drain the pasta.
  • Generously grease a 10 by 14-inch baking pan using 1 to 2 tablespoons of the butter. Set aside.
  • In a small bowl, mix the ricotta, egg, and parsley together. Rip up the basil leaves and fold them into the ricotta mixture. Season with salt and set aside.
  • With a slotted spoon, transfer the pieces of pork, sausage, and meatballs from the Sunday Gravy to a separate bowl. They will be coated with some of the tomato gravy. That's okay. Set the remaining gravy and bowl of meats aside.
  • Generously salt the boiling water and cook the lasagne sheets, a few at a time, at a rolling boil for 1 minute. The noodles will be very firm; they will cook further in the oven. Transfer the pasta to the ice water with a long-handled flat skimmer or strainer. As soon as they are cool to the touch- less than a minute- lift them out, shaking off excess water, and lay the noodles out on towels to drain. Repeat the process until all the pasta is cooked.
  • Preheat the oven to 375 degrees F.
  • Cover the bottom of the baking pan with a layer of lasagne sheets, allowing the pasta to hang over all sides of the pan. Top with another layer of lasagne sheets cut to fit the bottom of the pan without an overhang.
  • Cover the pasta with 1/2 of the reserved meats. Spoon over enough gravy to moisten well, about 1 cup. Sprinkle with a rounded 1/4 cup Pecorino Romano. Cover with another layer of pasta cut to fit without an overhang. Top with 1 cup gravy. Dollop 1/2 of the ricotta mixture over the gravy and top with half of the mozzarella and a rounded 1/4 cup of Pecorino Romano. Repeat the pasta and meat layer and the pasta and ricotta mixture layer.
  • Cover with a final layer of pasta (you may not have used all the lasagne sheets) cut to fit the inside of the pan without an overhang. Top with the remaining gravy and Pecorino Romano. Bring up the overhang of pasta and fold over the top of the lasagne to enclose the filling. Dot with remaining butter and loosely cover with foil.
  • Bake the lasagne for 25 minutes, uncover, and continue to bake until very lightly browned and bubbling hot, an additional 10 to 15 minutes. To keep the top noodles soft without browning, bake the lasagne covered with foil for 35 minutes and uncovered for the last 5 to 10 minutes in the oven. Let cool for 5 minutes before serving.
  • Heat the olive oil in a heavy-bottomed stockpot. Add the pork chops and sausages and brown on all sides. Transfer the pork chops and sausages to a plate to make room for the onions. Toss the onions into the pot with the garlic, fennel, and salt. Saute over moderate heat, stirring frequently and scraping up any bits left behind by the pork and sausages, until the onions are soft and golden.
  • Put the pork chops and sausages back in the pot with any juices on the plate. Add the tomatoes, water, and tomato paste. Drop in a few cheese rinds or ends if you have any. They are completely optional but give a nice flavor to the sauce. Cover the pot, bring to a boil, lower the heat, and simmer for 30 minutes. Gently drop in the meatballs, 1 at a time, shaking the pot a bit to encourage the meatballs to nestle in with the pork and sausage and to make room for the addition of more meatballs. After all the meatballs have been added, continue to simmer, covered, for an hour longer or until the pork chops are very tender.
  • To finish the gravy, transfer the pork chops to a cutting board. Remove and discard the bones, chop up the meat, and return it to the sauce. Keep warm over low heat.
  • Homemade, fresh pasta is glorious and well worth the effort. Nothing compares to the silky, light, slippery noodles you can produce in your own kitchen. This is a quick recipe. The dough is mixed in a food processor and a pasta machine kneads and rolls the dough. George's whips this up easily, in 5 minutes tops.
  • There are minor variations depending on the weather and the moisture in your flour (you may have to knead in an extra tablespoon or 2 of flour) but if you follow these proportions you will have excellent pasta.
  • The organic eggs we buy at the farmers' market vary in size. The most reliable way to get an accurate measurement is with a portion scale. The measuring cup method will work, too (crack eggs into a small mixing bowl, whisk to combine, pour the required amount into a liquid measuring cup, and discard or save any excess for another use). In making pasta, skill is developed through repetition. Each batch will be easier than the last and with a little experience exact measurements will be less important.
  • Don't fret if the final dimensions of the pasta are different from those specified in the recipe. The strips coming through the rollers of the pasta machine may be longer and/or not as wide. The ends may also narrow rather than being perfectly square. For instance, the edge going through the rollers first will be u-shaped (they can be cut later to square the noodle, if you like). Practice does make a difference in developing a feel for the process. Try to roll the dough as wide as possible--a little less than the width of the rollers, but don't be discouraged if that doesn't happen the first time. Adjust the cutting of the pasta to the strips you have--less wide sheets of lasagna noodles, for instance.
  • Put the flour in the bowl of a food processor fitted with the steel blade. With the motor running pour the eggs through the feed tube. Stop the machine as soon as the mixture resembles coarse cornmeal. Run the motor again pouring the hot water through the feed tube. Pulse on and off for 10 seconds; stop the motor. The dough should stick together when pressed between your fingertips. If not add another 1/2 to 1 teaspoon hot water and run the motor again. Turn out onto a cool, smooth surface--marble is ideal. Knead for 1 to 2 minutes until the dough is smooth and pliable. If it is sticky, knead in 1 to 2 tablespoons flour. Shape into a ball and cover the dough completely with plastic wrap and allow to rest at room temperature for a minimum of 20 minutes or up to 2 hours in the refrigerator. If the dough is refrigerated, remove it from the refrigerator about 20 minutes before proceeding with the recipe.
  • Set up the pasta machine with the rollers at their widest opening.
  • Divide the dough in 1/2. If the dough is sticky, dust it with flour. Flatten the dough half with the heel of your hand, and feed it through the rollers of pasta machine. Fold the dough in half lengthwise and feed it through the rollers again. Repeat 20 to 30 times occasionally folding widthwise to fit between the guides. This kneads and smoothes the dough further, creating silky and supple pasta.
  • Now you can roll the pasta into thin sheets by feeding it through each successive setting of the pasta machine until you have passed it through the second thinnest opening (dust with just enough flour as necessary to keep the dough from sticking). This process is done without folding. If the sheet of pasta becomes cumbersomely long cut it crosswise into 2 pieces to make it more manageable. Repeat with the second half of the dough. Lay the dough out on a barely floured counter or clean, dry kitchen towels. Each half of dough will yield 2 strips of pasta roughly measuring 3 feet by 4 inches.
  • Try to make lasagna noodles as wide as your pasta machine allows (4 to 5-inches); cut the lengths the most appropriate size for the pan you plan to use--anywhere from 8 to 12-inches long (longer if you like, or shorter if smaller noodles are easier for you to handle. Lasagna noodles can be cut and patched together in assembly). Keep in mind the pasta will grow, or expand, when it boils, increasing its dimensions.
  • After you have cut the noodles, you can cook them right away or lay them out in a single layer without touching on a lightly floured surface or on clean, dry kitchen towels until ready to cook (flour dusted or towel lined baking trays work well if you don't have counter) If you are not using the pasta the same day, allow it to dry completely, then transfer to long, shallow containers with lids. You can keep it in a cool, dry place for 1 week.

DAVE GROHL'S BADASS LASAGNA

Dave Grohl's Badass Lasagna image

Dave Grohl shared this family favorite with me, and it's the best lasagna I have ever tasted! I make mine dairy free by swapping out the butter for 4 extra tablespoons of olive oil and the mozzarella and Parmesan with vegan alternatives.

Provided by Food Network

Categories     main-dish

Time 3h45m

Yield 6 servings

Number Of Ingredients 17

6 tablespoons olive oil
4 tablespoons lightly salted butter, plus more for greasing the pan
3 small onions, finely chopped
4 cloves garlic, minced
3 stalks celery, finely chopped
2 carrots, peeled and finely chopped
2 bay leaves
2 1/2 pounds plant-based ground beef alternative
3 tablespoons tomato paste
7 ounces marinara sauce or tomato passata
1 1/2 cups red wine
1 1/2 cups vegetable broth
4 pinches ground nutmeg
Sea salt and freshly ground black pepper
9 no-boil lasagna sheets
14 ounces whole milk mozzarella, coarsely grated
2 ounces grated Parmesan

Steps:

  • Heat the oil and butter in a large flame-proof pan over medium heat. Add the onions and cook until softened, about 10 minutes. Add the garlic, celery, carrots and bay leaves and cook, stirring frequently, until soft, about 10 minutes.
  • Turn the heat up to medium-high. Add the plant-based ground beef alternative and break up with a fork if necessary. Add the tomato paste and marinara sauce and cook until bubbly, about 2 minutes.
  • Splash in the red wine and cook until it has evaporated. Remove the bay leaves, then pour in the broth and add the nutmeg, 3 pinches of salt and a sprinkle of pepper.
  • Simmer uncovered, stirring occasionally and adding a splash of water if dry, until the sauce has darkened and thickened and all the flavors have infused, about 2 hours.
  • Meanwhile, preheat the oven to 375 degrees F (190 degrees C) with a rack in the center. Grease an 8-by-12-inch broiler-safe baking dish or lasagna pan with butter.
  • Spoon a thin layer of sauce into the bottom of the pan. Top with a layer of 3 pasta sheets, followed by a third of the remaining sauce and a third of the mozzarella and Parmesan. Repeat the layers with the pasta, sauce and cheeses twice more until you have 3 layers in total.
  • Cover the dish with aluminum foil and bake until the lasagna is bubbling and the cheese is melted, about 25 minutes.
  • Remove the foil and turn the oven to broil, keeping the lasagna on the center rack. Cook to crisp the top, being careful not to let it burn, 10 to 15 minutes more.
  • Let cool for 15 minutes. Then it's ready to eat.

MEXICAN LASAGNE

Mexican Lasagne image

I feel I am careering about like some giddy traveller with air miles to spare here. The thing is I cook instead of travelling - a kitchen rather than armchair tourist - and since the former is less tiring than the latter, it stands to reason that I can cover more ground. Still, the notion of a Mexican lasagne might seem a fantastic voyage too far: so let me just say this is just a shorthand to imply Mexican-inspired ingredients piled up in lasagne-like fashion. In place of pasta layers, there are soft flour tortillas and in between them a riotous assembly of tomato, chilli, corn and cheese. I like to make a last-minute avocado salsa, which is no more really than a kind of unmushed guacamole, but it's an embellishment rather than a necessity. If you can totter towards the oven without spilling it, you're halfway there; but I do advise you to put it on a cookie sheet or sheet pan as you preheat to catch any drips that might fall later. And talking of later, one of the joys of this is that it reheats, by the slice, so wonderfully on the days that follow. So do think about cooking this even when you don't have so many to feed first time around.

Time 1h33m

Yield 8 servings

Number Of Ingredients 19

1 tablespoon garlic flavoured oil
1 onion, peeled and chopped
1 red bell pepper, seeded and chopped
2 green chiles, chopped, with seeds
1 teaspoon kosher salt or 1/2 teaspoon table salt
2 tablespoons finely chopped cilantro stalks
2 (14-ounce) cans diced tomatoes, plus 1 2/3 cups water to rinse out empty cans
1 tablespoon ketchup
2 (15-ounce) cans black beans, drained and rinsed
3 1/4 cups drained canned corn, from about 1 1/2 (15-ounce cans)
2 1/2 cups grated mature goats Cheddar, or cheese of your choice
8 soft flour tortillas (approximately 10-inch diameter)
Avocado Salsa, for serving, recipe follows
2 avocados
1 scallion, thinly sliced
3 tablespoons chopped green jalepenos from a jar or can
Salt
1 tablespoon lime juice
1/4 cup roughly chopped fresh cilantro

Steps:

  • Preheat the oven to 400 degrees F, slipping in a cookie sheet at the same time.
  • For the sauce: Heat the oil in a saucepan on the stove and fry the onion, bell pepper and chiles. Add the salt and cook gently for 15 minutes, and once soft, add the chopped cilantro stalks.
  • Add the canned tomatoes then rinse the cans out with water and add this too. Spoon in the ketchup and let things come to a simmer, leaving the sauce (or salsa in keeping with the Mexican mojo) to cook while you get on with preparing the filling- about 10 minutes.
  • For the filling: Mix the drained beans and canned corn in a bowl. Add most of the grated cheese, reserving some to sprinkle on the top at the end, and mix together.
  • Start to assemble the lasagne by spooning about a third of the salsa into the bottom of your ovenproof dish and smear it about, then layer on 2 tortillas so that they cover the sauce overlapping slightly, like a Venn diagram.
  • Add a third of the beans and cheese mixture covering the tortillas, and then about a quarter of the remaining salsa and another 2 tortillas.
  • Repeat with another third of beans and cheese, and more salsa before layering on another 2 tortillas.
  • Finally, add the last layer of beans and cheese, nearly all of the remaining salsa and cover with the last 2 tortillas. Spread the very last bit of salsa over the tortillas and sprinkle with the remaining cheese.
  • Bake for 30 minutes, and let it rest for a good 10 to 15 minutes before slicing like a pizza, and eat with the avocado salsa.
  • Halve the avocados, remove the pits, and then, using the tip of a sharp knife, cut lines down the flesh of each half, about a 1/4-inch apart and then the same across. Turn the avocado halves inside out, or otherwise release the pale green cubes into a bowl, then tumble in the scallion, chopped jalepenos, salt to taste, lime juice and most of the cilantro and toss gently to mix. Taste to see if any more salt is needed before scattering with the remaining cilantro and taking to the table.

LASAGNA

Lasagna image

This recipe makes enough lasagna for five to six people -- including seconds! When this dish comes out of the oven, let it rest for a few minutes to ensure beautiful, clean slices. You can also reheat it the next day for out-of-this-world leftovers. From the book "Mad Hungry," by Lucinda Scala Quinn (Artisan Books).

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Pasta and Grains

Number Of Ingredients 9

1 pound lasagna noodles or packaged precooked lasagna noodles
coarse salt
5 links sweet Italian sausage, or a mixture of hot and sweet, pierced with a fork
1 large egg
1 pound ricotta cheese
3/4 cup freshly grated pecorino Romano or Parmesan cheese, plus more for serving
5 cups Basic Italian Tomato Sauce, (double the recipe and cook for 30 minutes longer to thicken)
1 pound fresh or prepackaged mozzarella cheese, cut crosswise into 1/3-inch-thick slices
extra virgin olive oil, for drizzling

Steps:

  • Bring a large pot of water to a boil over high heat. Add the noodles and a generous pinch of salt and cook for half as long as the package suggests. Drain and float in cold water. (Skip this step if noodles are precooked.)
  • Preheat the oven to 350 degrees Fahrenheit. In a medium skillet over medium-high heat, fry the sausage links until cooked through, about 10 minutes. With kitchen scissors, cut the sausage into disks in the pan and continue to fry over low heat until the cut surfaces are crispy, about 20 minutes. Drain off the fat.
  • In a medium bowl, stir together the egg, ricotta, and 1/2 cup of the pecorino.
  • To assemble the lasagna, spread 1 cup of the tomato sauce in the bottom of a greased 9-by-13-inch baking dish. Drain and pat dry the noodles. Overlap one third of the noodles atop the sauce to cover the pan bottom. Spread all the cooked sausage over the noodles and spoon over another cup of sauce. Lay down the second third of noodles. Evenly dollop all the ricotta mixture on top of the noodles and flatten with the spoon to make an even layer. Top with the remaining noodles to completely cover the cheese. Pour over 1 1/2 to 2 cups sauce to cover. Evenly lay all the mozzarella slices on top. Sprinkle around the remaining 1/4 cup pecorino and drizzle with olive oil.
  • Bake uncovered for 40 minutes, or until the lasagna is bubbling all over and lightly golden on top. Let rest for 10 to 15 minutes before slicing. Serve with grated cheese and warmed extra sauce at the table.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Beef Recipes     Ground Beef Recipes

Time 2h30m

Yield Serves 8 to 10

Number Of Ingredients 20

3 tablespoons extra-virgin olive oil
3/4 pound 85-percent lean ground beef
3/4 pound sweet Italian sausage, removed from casing
1 medium onion, chopped (1 1/2 cups)
2 carrots, peeled and chopped (3/4 cup)
2 celery stalks, chopped (3/4 cup)
Kosher salt
6 garlic cloves, minced (2 tablespoons)
2 teaspoons dried oregano
1/2 teaspoon red-pepper flakes
3 tablespoons tomato paste
2 cans (28 ounces each) whole peeled tomatoes in juice
24 ounces whole-milk ricotta (3 cups)
1 cup whole milk
3 large eggs
4 ounces Parmigiano-Reggiano, finely grated (1 1/4 cups)
1 pound low-moisture mozzarella, shredded (4 cups)
3/4 cup chopped flat-leaf parsley
Kosher salt and freshly ground pepper
18 dry lasagna noodles

Steps:

  • Preheat oven to 375 degrees.
  • Meat Sauce: Heat oil in a large saucepan over medium-high. Add beef, sausage, onion, carrots, celery, and 1 teaspoon salt. Cook, stirring occasionally and breaking up meat into bite-size pieces, until vegetables soften and meat has browned, about 10 minutes. Add garlic, oregano, and red-pepper flakes; cook until fragrant, 1 minute. Add tomato paste; cook 2 minutes more. Puree tomatoes in a blender or food processor; add to pan. Bring to a boil, then reduce heat to low and simmer, stirring occasionally, until reduced and thickened slightly but still very loose, about 15 minutes. Remove from heat.
  • Cheese Mixture: In a large bowl, whisk together ricotta, milk, eggs, 1 cup Parmigiano-Reggiano, 2 1/2 cups mozzarella, parsley, 1 teaspoon salt, and 1/4 teaspoon pepper.
  • Assembly: Spread 2 cups meat sauce evenly in a 9-by-13-inch baking dish, preferably ceramic or enameled cast iron. Arrange 3 lasagna noodles over sauce (space noodles evenly; they will expand as the lasagna cooks). Spread 2 cups cheese mixture over noodles; top with 3 more noodles. Repeat layering of meat and cheese mixtures between noodles twice more. Spread 2 cups meat sauce evenly over top layer of noodles. Sprinkle evenly with remaining 1 1/2 cups mozzarella and 1/4 cup Parmigiano-Reggiano. Loosely cover with parchment-lined foil and transfer to a rimmed baking sheet.
  • Bake until noodles are tender but still al dente (easily pierced with the tip of a knife), 40 to 45 minutes. Uncover; continue baking until bubbly and puffed slightly along edges and golden brown in places on top, 20 to 25 minutes more. (There may appear to be a lot of liquid in the dish. It will be absorbed as the lasagna cools.) Transfer dish to a wire rack and let cool slightly and set, about 20 minutes; cut into squares to serve.

Tips:

  • Use fresh ingredients: The quality of your ingredients will greatly impact the flavor of your lasagna. Use fresh vegetables, meats, and cheeses whenever possible.
  • Don't overcook the pasta: Cook the pasta al dente, or slightly firm to the bite. This will prevent it from becoming mushy in the lasagna.
  • Make sure the sauce is flavorful: The sauce is one of the most important components of lasagna. Make sure it is well-seasoned and has a rich, deep flavor. You can use a variety of herbs and spices to create your own unique sauce.
  • Layer the lasagna properly: Start with a layer of sauce, then add a layer of pasta, followed by a layer of cheese. Repeat this process until you have used up all of the ingredients.
  • Bake the lasagna until it is bubbly and golden brown: The lasagna should be baked at a high temperature for a short period of time. This will help to create a crispy crust on top and a gooey, melted center.

Conclusion:

Lasagna is a delicious and versatile dish that can be enjoyed by people of all ages. With a little planning and effort, you can make a lasagna that is sure to impress your friends and family. So next time you're looking for a hearty and satisfying meal, give lasagna a try. You won't be disappointed!
