MEAT CAKE
This is my recipe for meat loaf. However, I have always cooked it in a 9x11 pyrex baking dish so my husband calls it meat cake. It even has an "icing " on top. I usually make mashed potatoes and a green vegetable to go with this. I also have enough leftovers to make meat cake sandwiches later in the week. The meat cake sandwiches are delicious.

LAYER CAKE MEAT LOAF
If the kids are always asking to eat dessert first, here's your chance. The moist "cake" layers are really full-flavored meat loaves "frosted" with instant mashed potatoes. Ketchup and mustard "icing" help complete the look.

Tips for Making Meat Cake:
- Choose high-quality ground meat: The type of meat you use will greatly impact the flavor of your meat cake. Opt for fresh, lean ground beef, pork, or lamb.
- Use a variety of seasonings: Don't be afraid to experiment with different herbs and spices to create a flavorful meatloaf. Common seasonings include onion powder, garlic powder, paprika, and cumin.
- Add moisture: To prevent your meatloaf from becoming dry, add some moisture to the mixture. This can be done by using eggs, bread crumbs, or vegetable puree.
- Cook the meatloaf thoroughly: Make sure to cook the meatloaf to an internal temperature of 160°F (71°C) to ensure that it is safe to eat.
- Let the meatloaf rest before serving: Allow the meatloaf to rest for 10-15 minutes before slicing and serving. This will help the juices redistribute, resulting in a more flavorful and moist meatloaf.
