1/4 cup bread crumbs
3 tbsp parsley
1/2 small onion
2 cloves garlic
1/4 cup parmesan cheese
pinch of chili powder
1 egg
3 tbsp milk
salt and pepper to taste
4 Italian hero rolls
8 slices provolone
1 cup Mozzarella cheese
melted butter (for brushing)

Steps:

  • Combine beef, bread crumbs, onions, parsley, fresh minced garlic, egg, milk, chili powder, parmesan cheese, and a generous sprinkle of salt and pepper. Using your hands mix gently, careful not to over mix.Roll meat mixture into golf sized balls
  • Fry the meatballs in vegetable oil over medium high heat, working in batches. Brown them on all sides. Each batch should take about 7 minutes.

One 12-inch sub roll
3 ounces red sauce
2 ounces whole milk mozzarella, shredded
1 ounce grated Parmesan

  • Preheat the oven to 450 degrees F. Cut the meatballs in half and place in the oven. Bake until the meatballs are warmed, 3 to 4 minutes. ¾ cup bread crumbs
2 teaspoons dried Italian seasoning
2 cloves garlic, minced
2 tablespoons chopped fresh parsley

1 French baguette
1 tablespoon extra-virgin olive oil
½ teaspoon garlic powder
1 pinch salt, or to taste
1 (14 ounce) jar spaghetti sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

3 slices white bread (stale is fine)
1/3 cup milk
1 pound ground pork or veal
1 pound ground beef
1/2 cup finely chopped onion
1 1/4 cups finely grated Parmesan, preferably Parmigiano-Reggiano
1/4 cup chopped parsley
2 garlic cloves, finely chopped
1 tablespoon kosher salt
1 teaspoon black pepper
Olive oil, for frying
5 cups Simple Tomato Sauce (see recipe)
1/2 pound fresh mozzarella, torn into bite-sized pieces

  • Heat oven to 400. Remove crusts from bread slices and discard. Tear remaining bread into small pieces and place in a small bowl. Pour milk over bread and let stand until liquid is almost absorbed, 5 to 10 minutes.
  • In a large bowl, combine pork or veal, beef, soaked bread, onion, 1/4 cup Parmesan, the parsley, the garlic, the salt and the pepper until just combined. Form meat into golf-ball-size rounds.
