MEATLOAF WITH A RANCH TWIST

Meatloaf with a Ranch Twist image

I wanted a different twist to my meatloaf, so I added a package of dry Hidden Valley Ranch Dressing Mix. Instead of using ketchup for the sauce, I use V8 to add a different taste. Use the spicy if you want more of a kick to your sauce. My kids went back for seconds when normally I have to beg them to just eat meatloaf.

Time 1h25m

Yield 6

Number Of Ingredients 13

½ cup vegetable juice (such as V8®)
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
2 pounds lean ground beef
1 tablespoon garlic powder
1 tablespoon onion powder
1 (1 ounce) package ranch dressing mix (such as Hidden Valley Ranch®)
1 teaspoon rubbed sage
1 teaspoon salt
½ teaspoon ground black pepper
1 cup Italian-seasoned dry bread crumbs
1 egg, beaten
½ cup fat-free milk

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Combine the vegetable juice, brown sugar, and Worcestershire sauce in a saucepan over medium heat; cook until the sauce thickens, about 10 minutes.
  • Mix the ground beef, garlic powder, onion powder, ranch dressing mix, sage, salt, and pepper together in a large bowl. Gradually sprinkle the bread crumbs into the meat while mixing so the crumbs are distributed evenly throughout; add the egg and milk and continue mixing. Shape the mixture into a loaf and transfer to a loaf pan. Pour about half the sauce over the meatloaf.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Cut the meatloaf into 6 even slices. Pour the remaining sauce over the slices to serve.

Time 2h

Yield 6

Number Of Ingredients 15

3 potatoes, peeled and cubed
¼ cup olive oil
1 sweet onion, finely chopped
3 cloves garlic, minced
1 ½ pounds ground beef
1 cup Italian seasoned bread crumbs
1 tablespoon fresh parsley, minced
1 teaspoon salt
1 teaspoon ground black pepper
2 eggs, beaten
½ cup chicken broth
½ cup Romano cheese, grated
1 (8 ounce) container ricotta cheese
1 cup shredded mozzarella cheese
2 tablespoons shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish.
  • Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash the potatoes with a potato masher, and set aside.
  • Heat olive oil in a skillet over medium heat. Cook and stir the onion and garlic until the onion is translucent, about 5 minutes. Set the onion and garlic aside.
  • In a large bowl, mix the ground beef, bread crumbs, parsley, salt, black pepper, onion and garlic mixture, eggs, chicken broth, and Romano cheese until thoroughly combined. In a second bowl, mix the mashed potatoes and ricotta cheese.
  • Spoon half the meat mixture into the prepared baking dish, and smooth into an even layer with a spoon. Spread the mashed potato mixture over the meat, leaving a 1/2-inch border around the edge of the meat; sprinkle 1 cup mozzarella cheese over the mashed potato layer. Cover the cheese with the remaining meat mixture in an even layer; press the edges down to seal in the mashed potatoes. Sprinkle loaf with additional 2 tablespoons of mozzarella cheese, if desired.
  • Bake in the preheated oven until the loaf is browned and the meat is no longer pink, about 1 hour. An instant-read meat thermometer inserted into the center of the loaf should read at least 160 degrees F (70 degrees C). Let the loaf stand for 10 minutes before serving.

Tips:

  • Use a combination of ground meats. This will give your meatloaf a more complex flavor and texture. Some good combinations include beef and pork, beef and veal, or lamb and beef.
  • Don't overmix the meatloaf mixture. Overmixing will make the meatloaf tough. Just mix the ingredients until they are evenly combined.
  • Add some moisture to the meatloaf mixture. This will help keep the meatloaf moist and juicy. Some good ways to add moisture include adding eggs, milk, or bread crumbs to the mixture.
  • Season the meatloaf mixture well. Don't be afraid to add plenty of salt, pepper, and other spices to the mixture. This will help give the meatloaf a lot of flavor.
  • Bake the meatloaf in a loaf pan. This will help the meatloaf hold its shape and cook evenly.
  • Let the meatloaf rest before slicing. This will help the meatloaf hold its juices and make it easier to slice.

Conclusion:

Meatloaf is a classic comfort food that is easy to make and can be enjoyed by people of all ages. With a few simple tips, you can make a delicious and moist meatloaf that your family and friends will love. Whether you are looking for a traditional meatloaf recipe or something with a little more flair, you are sure to find a recipe in this article that you will enjoy.
