2 ounces feta cheese
1/4 cup low-fat plain yogurt
Coarse salt and ground pepper
1/4 cup bulgur
1 can (15.5 ounces) chickpeas, rinsed and drained
1/2 pound ground beef chuck (95 percent lean)
1/3 cup roughly chopped mint leaves
Nonstick cooking spray
4 hamburger buns, split and lightly toasted
1 small cucumber, thinly sliced
1 large tomato, sliced

Steps:

  • In a small bowl, mash feta with the back of a fork until smooth. Stir in yogurt and season with salt and pepper. Set aside.
  • In small heatproof bowl, combine bulgur and 1/2 cup boiling water. Cover with plastic wrap and let sit 10 minutes. Meanwhile, in a food processor, pulse chickpeas until coarsely chopped. Transfer to a large bowl and add beef and mint. Drain bulgur and add to chickpea mixture. With your hands, mix until mixture is evenly combined and holds together when pressed into a ball. Divide into four 1-inch-thick patties and season with salt and pepper.
  • Lightly coat a large nonstick skillet with cooking spray and heat over medium-high. Add patties and cook until browned and crispy on the outside and cooked through, 8 to 10 minutes, flipping once. Serve on buns with sliced cucumber, tomato, and feta-yogurt sauce.

Steps:

  • Heat the olive oil in a skillet over medium heat, add the onion, cinnamon, coriander, pepper flakes, 1/2 teaspoon kosher salt and season with pepper. Cook until onions are tender, about 5 minutes. Stir in the garlic and parsley and cook until garlic is fragrant, about 1 more minute. Transfer to a large bowl and let cool slightly. Stir in the chicken and yogurt until the onion are evenly mixed. Season with 1 teaspoon kosher salt and some pepper. Shape into 4 1/2-inch thick patties.
  • Cook in a nonstick skillet over medium heat until browned and cooked through, about 5 minutes on each side, or until an instant-read thermometer inserted into the sides of the burgers registers between 165 and 170 degrees F. Brush burgers with the pomegranate molasses and set aside to rest for 5 minutes. Serve on toasted buns with fixings.

  • Finely chop the onion, and coursley grate the courgette and garlic into a large bowl, add the mince, oregano, basil,tomato puree, balsamic vinegar, grate in the Parmesan and season well with black pepper and a little salt.
  • Mix all the ingredients together well by hand the make six good size burgers from the mixture.
  • Heat the oil in a large frying pan and cook the burgers for 12 minutes turning half way through.
  • Slice the tomato into medium slices and drain the roasted peppers of excess oil and chop into large chunks.
  • Whist the burgers are cooking slice the ciabatta rolls in half and grill until slightly browned, serve the burgers on the buns with a tsp off mayonnaise, a good handfull of rocket and a slice off beefy tomato and a tbsp of chopped roasted pepper. Serve with home made chunky chips.

1 courgette
1 onion
400 g ground beef
2 garlic cloves
1 teaspoon oregano
1 teaspoon basil
1 tablespoon tomato paste
1 teaspoon oil
4 rolls
100 g mozzarella cheese
2 tomatoes
basil
vinegar
salt
pepper

Steps:

  • Trim the courgette and grate it coarsely onto a board, then tip it into a large mixing bowl. Peel the onion and grate it coarsely, then add this to the bowl with the courgette. Put the minced beef, garlic, oregano, basil and tomato paste or puree into the same bowl and season well with salt and pepper. Mix with clean hands until everything is thoroughly combined.
  • Divide the mince mixture into 4 evenly sized balls and flatten each into a patty shape about 2cm thick. Brush the oil over a large non-stick frying pan and place over a low heat. Fry the burgers gently for about 10 minutes or until nicely browned and cooked through, turning them halfway through the cooking time. Preheat the grill to its hottest setting.
  • While the burgers are cooking, cut the ciabatta rolls in half horizontally and place them on a grill pan, cut side up. Cook under the preheated grill until lightly toasted. Remove from the heat and take the bread off the tray and put it to one side.
  • Place the hot burgers on the tray and top each one with a slice of mozzarella. Put the tray back under the grill for another 1-2 minutes or until the mozzarella has melted.

1 tablespoon oil
1 red capsicum, thinly sliced
1 yellow capsicum, thinly sliced
1 small red onion, sliced
1 cup passata
500 g Italian sausages
1/4 cup fresh basil, finely chopped
1/4 cup parmesan cheese, grated
40 g baby spinach leaves
4 Italian rolls, lightly toasted

Steps:

  • Heat oil; cook capsicum and onion for 8-10 minutes or until soft and golden, stir in passata, season with salt and pepper. Cook stirring for 1 minute. Remove from heat and keep warm.

1 lb ground beef
1/4 cup of grated feta
1/4 cup of chopped olive (dont sqeeze out all the juice)
1/4 cup prepared salsa

4 tablespoons mild paprika
