Kosher Salt & Pepper
1 TBS Unsalted Butter
1-2 TBS Olive Oil (- divided*)
1 (8 ounce) Jar Sun-Dried Tomatoes (- drained and julienned (about 1 cup))
4 Cloves Garlic (- minced)
2 tsp Dried Greek Seasoning (*)
¼ tsp Crushed Red Pepper Flakes
1 TBS All Purpose Flour
3 ¼ - 3 ½ Cups Chicken Broth (*)
½ Cup Half and Half (can substitute heavy cream)
8 ounces Spaghetti (- broken in half)

½ heaping Cup Pitted Whole Kalamata Olives
6 ounces Feta Cheese (- crumbled, plus more for garnish)
1 ½ TBS Fresh Oregano

Steps:

  • Brown the chicken: Heat 1 tablespoon of butter and 1 tablespoon of oil in a large straight sided skillet or a large pot over medium-high heat. Add the chicken and season generously with salt and pepper. Cook until golden brown, but not quite cooked through, about 4-6 minutes total. Remove chicken to a plate.

Add in the garlic, Greek seasoning and crushed red pepper flakes. Cook until fragrant, about 30 seconds. Sprinkle the flour on the tomatoes and cook, stirring, for another 1 minute.
  • Add in the liquid: Add in the broth* and half-and-half, whisking to combine. Increase heat to high.
  • Add chicken and pasta: Add the spaghetti to the pot along with the chicken. Season with salt and pepper to taste.
  • Cover and cook: Bring to a slow boil, stirring occasionally, then immediately reduce to a simmer. Cover and cook for 10-15 minutes, or until pasta is just al dente*.
  • Finish pasta: Add in the artichoke hearts, olives, feta and oregano. Stir to combine and cook for 1-2 minute, or until feta is melted and pasta is cooked to your liking.
  • Serve: Garnish with more feta, herbs, nuts and plenty of fresh lemon wedges. Enjoy!

MEDITERRANEAN CHICKEN BAKE

Mediterranean Chicken Bake image

When searing the chicken for this flavorful potluck dish, work in batches to avoid crowding the pan. Crowding creates steam that will make the crispy skin soggy. This recipe comes from TV chef Sarah Mastracco.

3 tablespoons olive oil
Two (3 1/2-to 4-pound) chickens, each cut into 10 pieces

1 pint cherry tomatoes
Coarse salt and freshly ground pepper
1/4 cup chopped flat-leaf parsley

Steps:

  • Preheat oven to 375 degrees.
  • Heat 2 tablespoons olive oil in a large skillet over medium heat. Season chicken with salt and pepper; working in batches, add chicken to skillet, skin-side down, and cook until golden brown, 5 to 7 minutes. Turn chicken and cook 3 minutes more. Transfer to a large baking dish.
  • Drain oil from pan and return to medium heat. Add white wine to deglaze and use a wooden spoon to scrape up browned bits from bottom of pan. Whisk in red-wine vinegar, mustard, light-brown sugar, and dates; simmer until reduced by half, 3 to 4 minutes.
  • In a medium bowl, mix together remaining tablespoon olive oil, thyme, olives, capers, and cherry tomatoes; season with salt and pepper and toss to combine. Tips:

  • Mise en place: Before you start cooking, make sure you have all the ingredients and equipment you need. This will help you stay organized and avoid scrambling later on.
  • Use fresh, high-quality ingredients: The fresher and better the ingredients you use, the tastier your dish will be. If possible, try to buy organic and local produce.
  • Don't overcrowd the pan: When cooking the chicken, don't overcrowd the pan. This will prevent the chicken from cooking evenly and will make it more likely to stick to the pan.
  • Cook the chicken until it's golden brown: Cook the chicken until it's golden brown on both sides. This will help to lock in the flavor and juices.
  • Use a flavorful sauce: The sauce is what really brings this dish together. Make sure to use a flavorful sauce that you enjoy. You can use a store-bought sauce or make your own.
  • Add some vegetables: Vegetables are a great way to add color, flavor, and nutrition to your dish. You can add any vegetables you like, such as broccoli, zucchini, or spinach.
  • Serve immediately: This dish is best served immediately after it's cooked. The pasta will start to absorb the sauce and become mushy if you let it sit for too long.

Conclusion:

Mediterranean chicken fettuccine is a delicious and easy-to-make dish that's perfect for a weeknight meal. The combination of the flavorful sauce, tender chicken, and creamy fettuccine is sure to please everyone at the table.
