10 ounces medium shrimp, peeled and deveined

6 ounces fresh baby spinach
1 1/4 ounces Parmesan cheese, shaved

Steps:

  • 1. Cook pasta according to package directions, omitting salt and fat. 2. Melt butter and oil in a large skillet over medium heat. Add garlic to pan; cook 1 minute. Remove garlic from pan with a slotted spoon; place in a small bowl. Increase heat to medium-high. Add shrimp, salt, and pepper to pan; cook 4 minutes or until shrimp are done, stirring occasionally. 1/4 teaspoon pepper
1 pound fresh asparagus, trimmed and cut into 1-inch pieces
1 tablespoon olive oil
1/2 cup thinly sliced green onions

1 lb uncooked medium shrimp (thawed if frozen), peeled, deveined and tail shells removed
1 package (4 oz) crumbled feta cheese (about 1 cup)
3 cups lightly packed fresh spinach (about 3 oz), stems removed, torn into pieces
1 medium red bell pepper, chopped (1 cup)
2 tablespoons chopped fresh or 1 teaspoon dried basil leaves
1/2 teaspoon salt
1/3 cup sliced Kalamata olives or 1 can (2 1/4 oz) sliced ripe olives, drained
2 tablespoons olive or vegetable oil

1/2 cup crumbled feta cheese
1/4 teaspoon crushed red pepper flakes
1 teaspoon salt
