1 medium onion, chopped
1 medium green pepper, chopped
4-1/2 teaspoons olive oil, divided
1 garlic clove, minced
3/4 cup salsa
1/2 cup white wine or chicken broth
1/4 cup halved Greek olives
1/2 teaspoon Greek seasoning
4 mahi mahi fillets (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup crumbled tomato and basil feta cheese

Steps:

  • In a large ovenproof skillet, saute onion and green pepper in 1-1/2 teaspoons oil until tender. Add garlic; saute 1 minute longer. , Stir in the salsa, wine, olives and Greek seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until slightly thickened. Transfer to a bowl; set aside., Sprinkle mahi mahi with salt and pepper. In the same skillet, lightly brown fillets in remaining oil for 2 minutes on each side. Spoon salsa mixture over fillets. , Bake, uncovered, at 425° for 6 minutes. Sprinkle with cheese; bake 2-3 minutes longer or until fish just turns opaque.

10 tablespoons olive oil, divided
1/4 cup minced garlic, divided (about 10 cloves)
3 tablespoons chopped fresh oregano
3/4 teaspoon salt, divided
1/2 teaspoon fresh ground pepper, divided
4 (6 ounce) mahi mahi steaks
1 cup mixed olives in brine, pitted (such as kalamata, picholine, and niçoise)
1/4 cup chopped fresh chives
2 shallots, thinly sliced
3 tablespoons chopped fresh thyme

Steps:

  • Combine 2 tablespoons olive oil, 2 tablespoons garlic, and oregano in a small bowl. Stir in 1/2 teaspoon salt and 1/4 teaspoon pepper. Rub fish with oregano mixture. Cover and chill 1 hour.
  • Meanwhile, soak olives in cold water 30 minutes. Drain, and soak in cold water 30 additional minutes. Drain. Chop olives and set aside.
  • Place 4 tablespoons oil and chives in a blender; process until combined. Strain chive mixture through cheesecloth into a small bowl, if desired, and set aside.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add shallots; sauté 2 minutes. Stir in remaining 2 tablespoons garlic, thyme, and olives; cook 3 minutes or until heated. Stir in remaining 1/4 teaspoon salt and remaining 1/4 teaspoon pepper. Remove from heat; cover and keep warm.
  • Heat remaining 2 tablespoons oil in a large skillet over medium-high heat until hot. Sauté fish, skin side up, 3 to 5 minutes. Turn, and sauté 4 to 5 minutes, or until fish flakes with a fork. Place fish on individual serving plates. Spoon olive mixture evenly over steaks, and drizzle with chive mixture. Serve immediately.

3 medium tomatoes (about 3/4 pound total), each cut into 8 wedges
2 tablespoons plus 2 teaspoons extra-virgin olive oil, divided
1 tablespoon red-wine vinegar
4 (6-ounces) pieces mahimahi fillet (1 1/2 inches thick) with skin
1/2 cup mayonnaise
1/4 cup crumbled feta
3 tablespoons chopped mint
2 tablespoons chopped dill
1 teaspoon fresh lemon juice
8 very thin lemon slices

Steps:

  • Preheat broiler.
  • Toss tomatoes with 2 tablespoons oil, vinegar, and 1/2 teaspoon salt.
  • Line a broiler pan or small 4-sided sheet pan with foil or parchment paper and lightly oil foil. Put fish, skin sides down, on pan and season with 1/4 teaspoon each of salt and pepper.
  • Whisk together mayonnaise, feta, herbs, and lemon juice and spread over top of fish. Put 2 lemon slices (slightly overlapping) on center of each fillet. Drizzle lemon slices with remaining 2 teaspoons oil.

1 1/4 lbs mahi mahi fillets, fresh or thawed, about 3/4 to 1 inch thick
1/2 cup lemon juice
1/2 cup olive oil
3 tablespoons fresh oregano, chopped
3 tablespoons of fresh mint, chopped
1 teaspoon bottled minced garlic
1 teaspoon finely shredded lemon peel (zest)
1/4 teaspoon salt

  • Rinse fish; pat dry with paper towels. Cut fish into 4 serving size pieces (this is easier if fish is slightly frozen). Place fish in a resealable plastic bag.
